About Wheat germ
Wheat germ is the embryo of the wheat kernel, the small living part that would have become the next plant, and milling strips it out to make white flour because its oil turns rancid.
Selling it back as a health food is honest enough on nutrition, since it is genuinely dense in vitamin E, magnesium, folate and thiamine. The catch is that the germ concentrates the kernel triggers along with the nutrients. It is where wheat germ agglutinin, the famous wheat lectin, is concentrated, and we grade it at the top of both our lectin and our nickel scales. It is also wheat, so gluten and fructans come with it, which routinely catches people who sprinkle it on yoghurt or blend it into a smoothie without registering it as a wheat product at all. A tablespoon of germ is a small amount of food carrying an unusually concentrated dose of everything the germ holds.

- Contains gluten and is high in fructans, which is easy to forget when it arrives as a beige powder in a smoothie, a protein bar or a high-fibre cereal rather than as bread
- A poor choice on SIBO protocols, since concentrated fermentable fibre is what feeds the overgrowth
- Highly perishable. The germ is roughly ten percent oil and mostly polyunsaturated, so an opened jar left in a warm cupboard goes rancid within weeks. Bitter or paint-like flavour means throw it out, and refrigerate what you keep

Is wheat germ gluten free?
No. Wheat germ is part of the wheat kernel, so it contains gluten and is unsafe in coeliac disease or non-coeliac gluten sensitivity. The confusion comes from where it is sold: it sits with seeds and supplements rather than with flour, and its labelling leans on vitamin E and fibre rather than on the word wheat.
Is wheat germ high in lectins?
Yes, and it is the reason wheat germ comes up in almost every lectin-avoidance discussion. Wheat germ agglutinin is concentrated in the germ, which is precisely the fraction this product isolates. How it is eaten matters too. Lectins are broken down efficiently by wet heat, but wheat germ is usually stirred raw into yoghurt or smoothies or only lightly toasted, so it gets less of that treatment than boiled grains or beans do.
Is wheat germ high in nickel?
Yes. Nickel concentrates in the outer and embryonic layers of cereal grains, so bran and germ sit at the high end of dietary nickel while refined white flour and white rice sit at the low end. If you are following a low-nickel diet for systemic nickel allergy, wheat germ is one of the higher-yield things to remove because the dose per spoonful is so concentrated.
Why does wheat germ go rancid so quickly?
Because it is the oily part of the kernel. The germ carries most of the wheat kernel fat and that fat is largely polyunsaturated, which oxidises fast once the kernel is broken open and exposed to air, light and warmth. This is the original reason millers remove it: white flour keeps and wholemeal does not. Buy small jars, keep them in the fridge or freezer, and trust the bitter smell over the date on the label.
