About Parmesan cheese

The grated parmesan sold in shakers and bags is intensely aged before it is ground, which pushes its histamine and tyramine to the very top of the cheese chart while keeping its lactose and dairy protein high.

Pre-grated tubs also carry powdered cellulose as an anti-caking agent and can pick up cross-contamination on shared grating lines, so the trigger load is not only the cheese itself.

Is grated parmesan in a shaker high in histamine and tyramine?

Very high in both. Parmesan is aged for a year or more before grating, and that long ripening builds tyramine and histamine to levels near the top of any cheese. Grating it does not lower them, so a light dusting still delivers a concentrated dose.

What is the cellulose in pre-grated parmesan?

Powdered cellulose is a plant-fibre anti-caking agent, often derived from wood pulp, added to shaker and bagged parmesan to stop the shreds clumping. It is not a trigger for most people, but it is one reason pre-grated cheese behaves differently from a fresh block.

Can I use pre-grated parmesan with a dairy allergy?
