About Malt syrup
Malt syrup is made by sprouting barley, letting its own enzymes convert the starch, then boiling the liquid down to a dark, molasses-like sweetener.
That barley origin is the whole story: it is graded E for gluten, making it one of the very few sweeteners that is not gluten free. This is an under-known trap, because people who read every bread label carefully will pour malt syrup on a bagel or find it listed on a cereal box under barley malt extract or barley malt flavouring without registering it as wheat family. It is also graded E for fructans, again from the barley. Chemically it is mostly maltose, which is two glucose units, so unlike honey or high fructose corn syrup it barely registers for excess fructose at B.

Common questions about Malt syrup
Is malt syrup gluten free?
No. It is graded E for gluten because it is made from sprouted barley, and barley is one of the three gluten grains alongside wheat and rye. Malt syrup, malt extract and barley malt flavouring are all off limits on a coeliac diet. Rice malt syrup is a different product made from rice and is not the same thing, so read which grain the label names.
Is barley malt syrup low FODMAP?
No. Fructans are graded E and overall FODMAPs D. Barley is fructan rich and malting does not remove them, it concentrates the syrup around them. If fructans are your trigger, this is a worse choice than table sugar despite feeling like the more wholesome option.
Is maltose better or worse for you than fructose?
It behaves differently rather than better. Malt syrup is mostly maltose, a disaccharide of two glucose units, so it does not put a fructose load on the gut and it scores only B for excess fructose. That means it sidesteps fructose malabsorption, which affects a large share of people. What it does not sidestep is the gluten grade of E, the fructan grade of E, or the fact that it is still concentrated sugar with a SIBO grade of D.
Which sweetener can I swap in for malt syrup?
Glucose syrup is the closest match on both function and grades: gluten A, fructans A, FODMAPs A, and it gives you the same non-crystallising body in baking. Corn syrup and golden syrup also come in at gluten A with fructans A, and both keep the thick pourable texture malt syrup was doing in the recipe. All three stay clear of barley entirely.
