About Corn syrup

Corn syrup and high fructose corn syrup get talked about as one ingredient, and for anyone tracking fructose they are not.

Plain corn syrup is glucose based and grades moderate for excess fructose and moderate for FODMAPs, while HFCS grades high on both plus fermentation. That does not make corn syrup a health food: it grades pro inflammatory and a poor fit for DASH and Mediterranean eating. It is clean on gluten, histamine, tyramine, sulfites and salicylates.

How Corn syrup scores

Watch for

What trips people up

  • Moderate rather than high on excess fructose. Corn syrup is corn starch hydrolysed into glucose, and glucose actively helps the small intestine carry fructose across, which is why it sits well below high fructose corn syrup on the fructose malabsorption scale
  • Still a moderate FODMAP by dose, and the dose is the point. Corn syrup shows up in fizzy drinks, sauces, sweets, cereal bars and baked goods, so the total across a day is what provokes symptoms rather than one spoonful
  • Graded pro inflammatory and poor for both DASH and Mediterranean patterns. This is a refined sweetener with no fibre and no micronutrients, so the diet fit grades are about what it displaces
  • Read the ingredient list rather than the front of pack. Many products list corn syrup and high fructose corn syrup together, and it is the HFCS that carries the high fructose, high FODMAP and poor fermentation grades

FAQ

Common questions about Corn syrup

Is corn syrup the same as high fructose corn syrup?

No, and the difference is the whole reason people search for this. Corn syrup is corn starch broken down enzymatically into glucose, so it is essentially a glucose syrup with very little free fructose. High fructose corn syrup takes that same glucose syrup and runs it through a further enzymatic step that converts a large share of the glucose into fructose, typically to around 42 or 55 percent. In our data that shows up plainly: corn syrup grades moderate for excess fructose while HFCS grades high, and HFCS is also graded high for FODMAPs and poor for fermentation where corn syrup is not.

Is corn syrup low FODMAP?

It grades moderate, so it is not a free pass and not a hard no either. Excess fructose is the FODMAP that matters for a glucose based syrup, and because corn syrup carries glucose alongside any fructose present, absorption is helped rather than hindered. Keep an eye on cumulative intake across a day, and treat anything sweetened with high fructose corn syrup as a separate and much heavier question.

Does corn syrup contain gluten?

No. Corn syrup grades clean on gluten because it is made from corn starch, and the hydrolysis process leaves a purified sugar syrup behind. The same applies to corn syrup solids and to dextrose derived from corn. If you are coeliac, corn syrup is not the ingredient to worry about on a label.

Is corn syrup a problem for histamine intolerance?

It grades clean on histamine content, on histamine liberation, on tyramine and on sulfites, so as a sweetener it is one of the quieter options for a low histamine plan. The reason to limit it is the refined sugar side of the ledger, where it grades pro inflammatory, rather than any amine load.
