Overview
About Lemon curd
Lemon curd looks like a fruit preserve but it is really a cooked custard: lemon juice and zest thickened with butter, egg yolk and a large amount of sugar.
That means the dairy is doing most of the triggering, not the citrus. It grades E for dairy proteins and D for lactose from the butter, D for FODMAPs and D on the SIBO scale from the sugar, and E for EoE compatibility because egg and dairy are both declared allergens sitting in the same jar. The citrus side is milder than people expect: histamine is C and salicylate is only B. Worth knowing that lemon on its own grades D as a histamine liberator, so if lemon fruit reliably makes you itch, the curd carries a diluted version of that in a much richer package.

How Lemon curd scores
Watch for
What trips people up
- Dairy proteins E and lactose D. Butter and egg yolk are what make it a curd rather than a jam, so this is a dairy spread as much as a fruit one
- Egg is a top-eight allergen and is unavoidable here, which is why EoE compatibility grades E. There is no egg-free version of a real curd
- FODMAP D and SIBO D, driven mostly by the sugar load rather than by the lemon
- Histamine C and histamine liberator C. Moderate, but note that lemon itself grades D as a liberator, so citrus-reactive people may still feel it in the curd
- Pro-inflammatory at D. Between the sugar and the butterfat this is a treat food, and it is normally eaten on toast, scones or pastry that add their own load

FAQ
Common questions about Lemon curd
Is lemon curd dairy free?
No. Traditional lemon curd is set with butter and egg yolk, and it grades E for dairy proteins and D for lactose as a result. It is often shelved beside jam and marmalade, which are dairy free, so it is an easy mistake to make when you are avoiding milk.
Does lemon curd trigger histamine reactions?
It grades C for both histamine and histamine liberation, which is moderate rather than high. The lemon is the part people suspect, and lemon fruit does grade D as a histamine liberator on its own, but in curd it is diluted by sugar, butter and egg. If you react strongly, log whether plain lemon does the same thing before blaming the spread.
Is lemon curd high FODMAP?
It grades D for FODMAPs and D on the SIBO scale. The lemon contributes very little; the sugar content is what makes a generous spoonful a fermentable load, and the lactose from the butter adds to it for anyone who does not digest milk sugar well.
What can I spread instead of lemon curd?
Coconut butter is the closest in richness with no dairy, no egg and a much lower fermentable load. Jam and jelly both grade A for dairy proteins and sit lower on FODMAPs, so they work if you want something spreadable that is not built on butter and egg.
