Overview
About Jackfruit
Jackfruit is really two foods wearing one name, and the trigger question changes depending on which one is in the tin.
Unripe green jackfruit is bland and stringy, shreds like pulled pork and is the version behind every vegan taco. Ripe jackfruit is startlingly sweet and perfumed, closer to banana crossed with pineapple. Our grades cover the fruit at C for total FODMAPs and C for polyols, with B for fructans, B for GOS and B for excess fructose, so it is a portion-sensitive fruit rather than a clean one, and C for SIBO fermentability. It is clean on histamine content, mild on liberation, salicylate and oxalate. The one allergy note that is genuinely worth knowing is cross-reactivity: jackfruit anaphylaxis has been reported in people allergic to natural rubber latex and in people with birch pollen food allergy syndrome.

What trips people up
- Total FODMAPs C with polyols C. This is a fruit where the serving size decides the outcome, and where a plate built entirely from shredded jackfruit is a very different dose from a garnish.
- Graded C for SIBO fermentability, so it is one to be careful with during a SIBO protocol even though it looks like a plain vegetable on the plate.
- Reported cross-reactivity. Case reports describe anaphylaxis to jackfruit in a latex-allergic patient and in patients with birch pollen related food allergy, where jackfruit carries a Bet v 1 style allergen. If you get an itchy mouth from apple, hazelnut or cherry, or you react to latex gloves, treat your first jackfruit cautiously.
- Ripe and unripe are not interchangeable. Tinned in brine or water means the savoury green fruit and brings sodium with it. Tinned in syrup means the sweet ripe fruit, which stacks added sugar on top of an already fructose-bearing fruit.
- It is a meat substitute in texture only. Jackfruit is around two grams of protein per hundred grams, so a jackfruit taco is a carbohydrate dish, not a protein one, however convincingly it pulls apart.

FAQ
Common questions about Jackfruit
Is jackfruit low FODMAP?
Not reliably. Jackfruit grades C for total FODMAPs and C for polyols, with a smaller B level contribution from fructans, GOS and excess fructose, which puts it in the moderate, portion-dependent band rather than the safe one. A small amount folded through a dish is usually manageable. A full jackfruit main course, where it is doing the work of a whole portion of meat, is where sensitive guts tend to notice it.
What is the difference between ripe and unripe jackfruit?
Unripe green jackfruit is neutral and fibrous, sold tinned in brine or water, and is the one used as a shredded meat substitute. Ripe jackfruit is intensely sweet and aromatic and is eaten as fruit or tinned in syrup. For triggers the split matters mostly for sugar: ripening converts starch to sugars, so the ripe fruit brings more fructose. The sticky white latex sap that makes green jackfruit awkward to butcher is also mostly gone by full ripeness.
Can jackfruit cause an allergic reaction or itchy mouth?
It can, in two specific groups. Published case reports describe jackfruit anaphylaxis in a person with natural rubber latex allergy, part of the latex fruit pattern, and in people with birch pollen related food allergy, where an allergen resembling birch Bet v 1 is responsible. If you already get oral allergy symptoms from raw apple, stone fruit or hazelnut, jackfruit is a reasonable one to try in a small amount first. This is a true allergy mechanism, separate from the FODMAP grades on this page.
Is jackfruit high in histamine?
No. Jackfruit grades A for histamine content and only B for histamine liberation, so it is one of the easier tropical fruits on histamine, unlike pineapple or papaya which both grade D as liberators. The caveat is the tin: once opened, jackfruit in brine kept in the fridge for days is a storage question, and that applies to any protein-poor, moisture-rich leftover.
