About Tilefish
Tilefish is a rare case where the entire trigger story is a contaminant rather than an intolerance.
Its panel is quiet: low histamine, no gluten, no lactose, no salicylate, no oxalate, no sulfites. What puts it on avoid lists is mercury. Gulf of Mexico tilefish sits in the FDA and EPA "Choices to Avoid" tier and has tested with the highest average methylmercury of any commercially sold fish. The trap is that Atlantic Ocean tilefish carries completely different advice, and a fish counter almost never tells you which ocean yours came from.

Common questions about Tilefish
Is tilefish safe during pregnancy?
Gulf of Mexico tilefish is not. It is one of the seven fish the FDA and EPA place in "Choices to Avoid", where the recommendation is zero servings during pregnancy and breastfeeding and for children ages 1 to 11. Atlantic tilefish is treated separately and falls in the once-a-week "Good Choices" tier, but unless the counter can confirm the origin, the safe assumption is the stricter advice.
Why is tilefish so high in mercury?
Golden tilefish live in burrows on the deep continental shelf and can live for decades, feeding on crustaceans and small fish the whole time. Methylmercury is not excreted efficiently, so it accumulates over a long life and biomagnifies up the food chain. FDA sampling of Gulf of Mexico tilefish returned the highest mean mercury of any fish in its commercial dataset.
Is Atlantic tilefish the same as Gulf tilefish?
Biologically they are close, but the mercury advice is not. The FDA and EPA chart splits them: Gulf of Mexico tilefish is in "Choices to Avoid", Atlantic Ocean tilefish is in "Good Choices" at one serving per week. This is the only species on the chart split by ocean, and it is the single most useful thing to ask about when buying it.
Is tilefish high in histamine?
No. Tilefish grades low on histamine and is not a scombroid species, so it does not carry the free histidine that makes tuna, mackerel and wahoo prone to histamine build-up. Its problem is a heavy metal, not a biogenic amine.
