Yes, it is one of the highest-oxalate foods there is. On a diet to prevent calcium-oxalate kidney stones, spinach is usually the first food doctors ask people to cut back, and pairing it with a calcium source or swapping in a low-oxalate green like lettuce or kale helps.
Why does a healthy food like spinach cause histamine symptoms?
Being nutritious and being low-trigger are two different things. Spinach grades high in histamine and is a moderate histamine liberator, so in histamine intolerance it can still set off itching, flushing or headaches regardless of how good its vitamin content is.
Does cooking spinach reduce its oxalate?
Boiling and draining spinach can lower its soluble oxalate meaningfully, but it does not remove it all, and sauteing or blending raw spinach into a smoothie keeps the oxalate load high. If oxalate is your issue, portion size matters more than cooking method.
