About Reindeer

Fresh reindeer is graded clean on every chemical trigger tracked here: A on histamine, histamine liberation, tyramine, free glutamate, salicylate, oxalate, nickel, sulfite, nitrite, gluten, lactose and all four FODMAP groups.

The complication is that hardly anyone outside the Nordic north meets reindeer in that state. It travels as suovas, the Sami cold-smoked salted cut, as air-dried strips, as cured sausage, and as the frozen paper-thin shavings thrown straight into a pan for poronkaristys. Smoking, salting and drying are exactly the processes that generate histamine and tyramine, so the grade on this page describes the raw material rather than whatever is in the packet you bought.

What trips people up

  • Suovas, dried reindeer and reindeer sausage are matured products and should be logged as their own entries. Cold smoking in particular involves hours at temperatures warm enough for bacteria to keep working, which is the amine-building window rather than a kill step.
  • The frozen shavings are the happy exception. Reindeer sold as a frozen block and planed straight into a hot pan never spends time chilled and unfrozen, which is the state amines actually accumulate in. If cured reindeer bothers you and poronkaristys does not, that is the mechanism.
  • Reindeer is a cervid. Chronic wasting disease was confirmed in wild reindeer in Norway in 2016, the first case in the species and the first in Europe, and Norway responded by culling an entire herd. Commercially herded reindeer sits inside national surveillance programmes.
  • Reindeer is mammalian meat, so alpha-gal syndrome covers it exactly as it covers venison.
  • The traditional plate is where the triggers actually are: reindeer is served with lingonberry, a cream or butter sauce and mashed potato, and cream is the lactose that the meat has none of.

Common questions about Reindeer

Is smoked reindeer high in histamine?

Treat it as though it is. Suovas and other cold-smoked salted reindeer spend hours in warm smoke and then more time salted and maturing, and any meat held in those conditions builds histamine and tyramine. Cooking it afterwards does nothing, because both amines are heat stable. The reindeer that went into it was graded clean, which is the point worth understanding: what you are reacting to came from the process, not the species.

Is reindeer the same as caribou?

Same species, Rangifer tarandus, different words for different populations. Reindeer generally means the semi-domesticated herded animals of northern Scandinavia, Finland and Russia, while caribou means the wild North American herds. For a trigger journal they are interchangeable as fresh meat. What differs is how they reach you: reindeer is mostly a herded, inspected commercial product often sold cured, and caribou is mostly hunted, which brings the ammunition and hanging questions that apply to any wild game.

Do reindeer get chronic wasting disease?

Yes. The prion disease long known in North American deer and elk was found in a wild Norwegian reindeer in 2016, the first time it had appeared in the species and the first time in Europe. Norway culled the affected herd and put extensive testing in place, and Nordic reindeer entering the food chain is monitored. Prions survive cooking, freezing and smoking, so as with elk the safeguard is surveillance and testing upstream, not anything you can do in the kitchen.
