About Prawn

Prawn is the British and Commonwealth name for what Americans call shrimp, and the trigger story is the same crustacean tale.

Prawns are one of the major shellfish allergens, and they are routinely dipped in sulfites such as sodium metabisulfite at sea or in processing to stop the harmless black spotting called melanosis. That sulfite residue is a genuine trigger for sulfite-sensitive and asthmatic people. Are prawns the same as shrimp for allergies?

Yes. Prawn and shrimp are common names for closely related crustaceans, and both are top shellfish allergens. If you are allergic to one you should treat the other as unsafe, because the crustacean proteins that drive the allergy, chiefly tropomyosin, are shared across prawns, shrimp, langoustines and similar shellfish.

Why are prawns treated with sulfites?

To stop melanosis, the black spotting that forms on the shell and flesh as prawns age. Producers dip them in sulfites such as sodium metabisulfite on the boat or during processing to keep them looking fresh. The residue stays on the prawn and can trigger wheezing, hives or flushing in sulfite-sensitive people, which is why it is supposed to be declared on menus and packs.

How can I tell if my prawn reaction is an allergy?

It takes some detective work, because three different problems can look alike. A true shellfish allergy is an IgE reaction to the crustacean protein, but a similar flush or wheeze can come from the sulfites used to preserve prawns, or from histamine that builds up in prawns left too warm.
