About Perry
Perry is cider made from pears rather than apples, and swapping the fruit changes the sugar profile more than the label suggests.
Pears carry excess fructose and sorbitol together, and perry inherits both: it grades at the very top of the scale for total FODMAP and for excess fructose, with high polyols alongside. That double hit is the reason perry can produce bloating, wind and urgent, watery stools in someone who handles a dry apple cider reasonably well, since our apple hard cider entry grades one step lower on both total FODMAP and fructose. Perry also grades high for sulfites, higher than apple cider does, and worst-in-class for SIBO. The amine and salicylate columns sit at moderate.

What trips people up
- Top of the scale for excess fructose and for total FODMAP. Pear juice is fructose-dominant and fermenting it to alcohol does not clear the imbalance
- High polyols, meaning sorbitol, the sugar alcohol pears are best known for. Sorbitol and excess fructose together are an osmotic load that draws water into the bowel, which is a mechanical effect rather than an immune one
- High sulfites, added to fruit ciders both as a preservative and to stop the bottle refermenting. If sulfites give you wheeze, headache or a flushed face, perry grades worse for this than apple cider
- Worst-in-class SIBO grade, the predictable result of fermentable fruit sugar arriving with alcohol
- Sweet and medium perries hold back more unfermented pear sugar than a dry one, so style shifts the fructose and sorbitol dose meaningfully

Common questions about Perry
Is perry high FODMAP?
Very. Perry grades at the top of the scale for total FODMAP, at the top for excess fructose, and high for polyols. Those are two separate mechanisms arriving in the same glass: fructose that outstrips the transporter that absorbs it, and sorbitol that is poorly absorbed by almost everyone. If you have identified fructose malabsorption or a sorbitol problem, perry is one of the least forgiving drinks on the shelf.
Why does pear cider upset my stomach more than apple cider?
Because pears are the more difficult fruit. On our grades apple hard cider is high for total FODMAP and high for excess fructose, while perry is a full step worse on both, sitting at the top of each scale. Both are high in polyols. So the sorbitol is common to the two drinks, but the fructose load is where perry pulls ahead, and that is usually what people notice.
Is perry gluten free?
Yes on our grades. Perry is fermented pear juice with yeast and no grain, so it grades clean on gluten, along with lactose and dairy protein. It is a reasonable choice on that axis alone, which is exactly why ciders and perries get recommended to coeliacs looking for an alternative to beer. Just be clear that gluten free and gut friendly are different questions here, and perry fails the second one badly.
Does perry contain sulfites?
Usually a meaningful amount. Perry grades high for sulfites, a step above apple hard cider, because pear juice is prone to browning and to restarting fermentation in the bottle, and sulfite is the standard answer to both. Unsulfited natural perries exist from small producers, but any mainstream bottle should be assumed to carry sulfites and will normally declare them.
