About Octopus
Octopus is a cephalopod mollusc, and on food chemistry it is a fairly quiet food: moderate for histamine, moderate as a histamine liberator, moderate for tyramine, and clean on everything else we track.
No gluten, no lactose, no FODMAPs, no salicylate, no oxalate, no nickel, no nightshade, no added sulfites or nitrites. Nutritionally it is one of the leanest high-protein foods on the chart, roughly 30 g of protein and about 2 g of fat per 100 g cooked. The reason octopus shows up in trigger journals is usually one of two things that have nothing to do with its grades. The first is allergy: octopus is a mollusc, and along with squid it is one of the most commonly reported cephalopod allergens, driven by tropomyosin, which cross-reacts across molluscs and often with shrimp and crab. The second is handling. Octopus muscle is dense with collagen, so it needs either a long slow braise or the freeze-and-thaw trick that ruptures the connective tissue with ice crystals. That means most octopus you buy has already been frozen, often already cooked, and has spent hours in a warm pot. Histamine forms before cooking and survives it, so a long simmer cannot undo a bad cold chain.

Is octopus high in histamine?
Octopus is moderate rather than high. It also rates moderate as a histamine liberator and moderate for tyramine, so all three sit in the borderline band together. In practice the freshness and storage history matter more than the species. Because octopus is nearly always frozen and often pre-cooked before it reaches you, and because it is then braised for an hour or more, a lot of time passes between catch and plate. Any histamine formed along the way is heat stable and cooking will not remove it, so leftovers are the portion most people react to.
Can you be allergic to octopus but fine with fish?
Yes, and it is common. Octopus is a mollusc and the main allergen is tropomyosin, which is a completely different protein from the parvalbumin that drives most finfish allergy. Someone who reacts to octopus will often also react to squid, cuttlefish, clams and snails, and frequently to shrimp, crab and lobster, because tropomyosin is shared across molluscs and crustaceans. Plenty of those people eat salmon or cod without any issue.
Is octopus low FODMAP?
Yes. Octopus grades clean across every FODMAP group we track: fructans, GOS, excess fructose, polyols and lactose are all clear, and it has no fermentable carbohydrate to speak of. If octopus upsets your gut, look at what it was cooked in. Garlic and onion in the braise, or the bread served with it, are the usual FODMAP source, not the octopus.
Why does octopus need such long cooking, and does it matter for triggers?
Octopus muscle is unusually rich in collagen, which is why it goes rubbery when cooked quickly and tender only after a long low simmer or after being frozen and thawed so ice crystals break the connective tissue apart. It matters for triggers indirectly. That long process means most octopus has been frozen, thawed, simmered and often chilled again before you eat it, and each of those steps is an opportunity for amines to build if the temperature slips. Buy it frozen or from a counter you trust, and eat the braise the day it is made rather than on day three.
