About Lime Leaves
Lime leaves are a citrus leaf, and that is a genuinely different food from a citrus fruit.
What you are eating is an aromatic leaf whose flavour sits in its essential oil, mostly citronellal, with none of the juice, pulp, peel oils or fruit acids that make lime taste sharp. The trigger consequence is clear in the grades: our lime and lemon entries are both graded strong histamine liberators, while the leaf is graded only a mild one. It is otherwise clean on histamine content, gluten, lactose, every FODMAP subgroup, nickel, sulfites, tyramine, nitrites and nightshades. The one grade that is not clean is salicylate, at moderate, which is what you would expect from any intensely aromatic leaf.

What trips people up
- Moderate salicylate. Strict salicylate protocols such as the RPAH elimination restrict strongly aromatic herbs and spices as a class, and a citrus leaf sits squarely in that class even though the fruit trigger is a separate issue
- Fresh, frozen and dried are not equivalent. Frozen leaves behave much like fresh. Dried leaves sold in tubs have lost water, so per gram they are a more concentrated aromatic dose, which matters if you measure by pinch rather than by leaf
- A leaf that arrives inside a curry paste or a shop-bought soup base is not a lime leaf exposure in isolation. Those bases are built on shallot, garlic and lemongrass, and our garlic and shallot entries both grade very high on fructans, which is almost always the bigger gut variable
- Mild histamine liberator and mild oxalate. Both are low enough that the leaf is a reasonable way to get a citrus-like lift into a dish without the fruit
- The evidence base here is thin. Citrus leaves are not individually tested in the standard FODMAP or histamine reference lists, so these grades are inference from the plant rather than measurement, and a personal trial is worth more than the card

Common questions about Lime Leaves
Do lime leaves count as citrus?
Botanically yes, chemically not really. The leaf carries aromatic oils rather than the citric acid, juice and fruit compounds that drive most citrus reactions, which is why it is graded a mild histamine liberator while lime and lemon fruit are graded strong ones. In practice many people who cannot tolerate lime juice use the leaves without any trouble. The exception is a true citrus allergy, where the whole plant is worth treating as one exposure until you have tested it.
Are lime leaves high in salicylates?
They grade moderate, which makes salicylate the main thing to track here. Aromatic leaves concentrate the compounds that give them their smell, and salicylates are among them. A couple of leaves simmered in a broth is a small exposure; a fine shred of several leaves stirred raw through a salad is not.
Are lime leaves low FODMAP?
Yes. They grade low on fructans, GOS, excess fructose, polyols and lactose, and they are used in quantities too small to contribute meaningful fermentable carbohydrate anyway. If a dish flavoured with lime leaves upsets you, look at the paste, the onion, the garlic or the coconut cream first.
Are dried lime leaves as good as fresh, and do they change the trigger profile?
The trigger profile is the same plant either way, but the concentration per gram is not. Drying removes water and leaves the aromatic fraction behind, so a level teaspoon of crumbled dried leaf represents more leaf than one fresh leaf does. Fresh and frozen give a cleaner, brighter perfume and are easier to portion accurately if you are tracking amounts.
