About Kefir

Kefir is a cultured milk drink that gets sold as a gut-health hero, which is exactly why its trigger profile surprises people.

The long ferment with dozens of bacteria and yeasts builds up histamine and tyramine, so kefir is high in both, and because it starts as milk it is also very high in lactose and carries the same casein and whey dairy proteins. If you tolerate probiotics but still react to kefir with congestion, flushing or gut upset, the fermentation and the dairy are usually why.

Is kefir high in histamine?

Yes. Kefir is fermented for many hours by a large mix of bacteria and yeasts, and that process generates histamine and tyramine as it goes. It is one of the higher-histamine dairy products, more than fresh milk and typically more than plain yogurt, so it is usually avoided on a low-histamine diet even though it is marketed as a probiotic.

Can I drink kefir if I am lactose intolerant?

Fermentation lowers the lactose somewhat but does not remove it, and kefir is still graded very high in lactose. Many lactose-intolerant people find a small amount tolerable, but a normal glass often brings bloating and cramps. An unsweetened plant milk like coconut, almond or rice sidesteps the lactose entirely.

Why does kefir bother me when I handle other probiotics fine?

Probiotic tolerance and histamine tolerance are different things. Kefir stacks two problems at once: the ferment itself is high in histamine and tyramine, and the base is dairy, so it also delivers lactose and casein. You can react to those even if capsule probiotics never bothered you.
