About Gorgonzola
Gorgonzola is Italy DOP blue cheese from Lombardy and Piedmont, veined with Penicillium mould and ripened for months, and that ripening is precisely what puts it at the top of the trigger charts.
It is graded at the maximum for both histamine and tyramine, which is why aged blue cheese is the headline item on classic MAOI food handouts and on migraine trigger lists. It is graded high for free glutamate too, the savoury depth that gives it its punch. The one thing gorgonzola is not is a lactose problem: months of ripening leave almost nothing behind, so it is graded clean on lactose while still delivering a heavy load of casein. Dolce is the young, spoonably creamy style and piccante is aged longer into a firmer, sharper cheese, but both are aged cheese and neither is a low amine option.

Is gorgonzola high in tyramine?
It is graded at the very top of the tyramine scale. Tyramine forms as bacteria and moulds break down protein during ripening, and a mould-veined cheese aged for months is close to the worst case. That is why aged and blue cheeses sit at the head of the avoid list handed to people taking monoamine oxidase inhibitors.
Can gorgonzola trigger a migraine?
It is one of the most frequently named dietary triggers in migraine, and gorgonzola carries both mechanisms at once: maximum tyramine and maximum histamine. If cheese is on your suspect list, blue cheese is the one to test first, and a food journal with the timing is more useful than cutting all dairy blindly.
Is gorgonzola lactose free?
Close to it. The long ripening ferments the lactose away, and gorgonzola is graded clean on lactose, so it is one of the cheeses lactose intolerant people often handle fine. The casein is still fully present, so it is not an option for a milk protein allergy.
Is gorgonzola dolce safer than piccante?
Milder in flavour, not meaningfully safer. Dolce is the younger, sweeter, creamier style and piccante is aged longer and tastes sharper, but both spend long enough in the cave to be graded at the maximum for histamine and tyramine. Picking dolce changes the eating experience, not the amine load.
