About Goat cheese

Goat cheese (chèvre) grades high in histamine and high in tyramine, which is why an aged, tangy log can bring on flushing, headaches or a racing heart in amine sensitive people even when a plain cheese does not.

It is still high in dairy protein: goat casein is A2 dominant and lower in the aS1 fraction that drives many cow reactions, so some people with a cow dairy intolerance digest it more comfortably, but it is not casein free and a true cow milk allergy usually cross reacts. Lactose sits moderate, a notch below most cow cheeses.
