About Evaporated milk

Evaporated milk is cow milk with about half the water boiled off and no sugar added, so it is easy to confuse with condensed milk.

The difference matters: evaporated milk is unsweetened, but concentrating it pushes its lactose and dairy protein even higher, which is why it can trigger stronger bloating and dairy reactions than plain milk despite the missing sugar.

Does evaporated milk have more lactose than regular milk?
