About cumin seeds

Whole cumin seeds are the little ridged seeds you dry-toast in a pan or bloom in hot oil (tempering, or tadka) before they go into a curry, dal or rice.

Used whole in normal cooking amounts they are low-trigger: low salicylate, low histamine and low FODMAP. The main caveat is elimination diets, where seed spices including cumin are paused during a strict AIP reset. Whole seeds also give you more control than pre-ground cumin, which oxidises faster and is often where heavier, more concentrated seasoning creeps in.

Do I need to toast cumin seeds?

You do not have to, but a quick dry-toast or a few seconds in hot oil releases the aromatic oils and gives a rounder, nuttier flavour than raw or pre-ground cumin. It changes the taste, not the trigger profile.

Are cumin seeds ok on AIP?

Not during strict elimination. Cumin is a seed-based spice, and seed spices come out on autoimmune-protocol elimination. Because it is otherwise low-trigger it is a common early reintroduction, and leafy seasonings like bay leaf are AIP-safe in the meantime.
