Is bass high in histamine?

Not really. Bass is a lean white fish that grades safe on FODMAPs, gluten, lactose, salicylates, oxalates, nickel, glutamates and lectins, with nothing flagged for nightshade, sulfite or dairy sensitivity. Only two grades sit at borderline instead of clean, histamine and tyramine, and both track handling rather than the species. Bass is not a scombroid fish like tuna or mackerel, whose dark muscle is loaded with the histidine that turns into histamine, so a fillet that stayed cold from the boat is usually an easy protein to log.

What trips people up

  • Borderline on histamine, which is about the chill chain rather than the fish: a fillet that spent time above fridge temperature builds amines, and that histamine is heat stable, so cooking will not undo it
  • Borderline on tyramine as well, worth knowing if you take an MAOI or track migraine, because tyramine climbs alongside histamine as the flesh ages. Day-three leftovers are the version to be careful with
  • A squeeze of lemon is fine, but the classic white wine pan sauce is not: wine is graded high in histamine and high in salicylates, so the sauce can set off a reaction the fish never would
  • "Bass" covers very different fish. Branzino (European sea bass), black sea bass, striped bass and freshwater largemouth are all sold under the name, and Chilean sea bass is not a bass at all but Patagonian toothfish, with a much fattier flesh and a longer supply chain

Common questions about Bass

Is bass safe with histamine intolerance?

Bass is graded moderate on histamine, not high. The fish that cause most histamine trouble are the dark-fleshed scombroid family (tuna, mackerel, sardines, anchovies) because their muscle is rich in histidine, the amino acid bacteria convert into histamine. Lean white fish like bass starts with far less. What decides your reaction is how it was kept: fish frozen at sea or sold off proper ice is the lower risk buy, and eating it the day you get it beats any cooking technique.

Does bass contain tyramine?

It is graded borderline. Tyramine is produced by the same bacterial breakdown of protein that makes aged cheese, cured sausage and old fish high in it. A fresh bass fillet carries very little, but one nearing its sell-by date, or leftovers kept several days, carries more. If you are on an MAOI or tracking migraine, treat freshness as the variable rather than avoiding the fish.

Is bass low FODMAP?

Yes. Plain bass is graded clean on every FODMAP column: fructans, GOS, excess fructose and polyols. Fish is protein and fat with no fermentable carbohydrate for gut bacteria to work on. If bass upsets your gut, look at what came with it, usually garlic butter, an onion-heavy stuffing, or a flour crust.

Can I eat bass on a paleo or AIP elimination diet?

Bass is graded compliant with paleo and AIP, and it is clean on gluten, dairy protein and nightshades, so it is one of the simpler proteins to build an elimination phase around. Separately, finned fish is one of the major labelled food allergens, and a true fish allergy is an immune reaction that has nothing to do with the food chemistry above. If you get lip tingling, swelling or hives from any fish, that needs an allergist, not a trigger journal.
