Serving size, prep, and portion notes for pectin

Pectin is the soluble fibre that makes jam set, extracted commercially from citrus peel or apple pomace and added back to everything from low-sugar preserves to gummies, yoghurt drinks and low-fat dressings. It is graded A for FODMAPs, gluten, lactose, dairy protein, histamine content, sulfites and nitrites, so it is a low FODMAP ingredient and not a histamine problem. The catch is that low FODMAP does not mean non-fermentable: pectin is graded C for SIBO fermentation because gut bacteria ferment it readily in the colon, which is exactly the gas-and-bloating complaint people report after a big pectin dose. It also carries a C for salicylates and a C for oxalate from its citrus peel and apple pomace origins, plus a B for nickel and glutamates. All of those scale with dose, which is why a spoonful in jam and a supplement scoop of modified citrus pectin are not the same question.

Watch for

Fermentable but not a FODMAP. Pectin is graded A on fructans, GOS, fructose and polyols yet C for SIBO, because it is a soluble fibre bacteria break down in the colon rather than an oligosaccharide. If you are low FODMAP and still bloating after fruit spreads or fibre supplements, this is the distinction that explains it / High-methoxyl and low-methoxyl pectin are not interchangeable. HM pectin only gels with a lot of sugar, roughly fifty-five per cent or more, plus acid, so a jam made with it is a sugar delivery vehicle. LM pectin sets with calcium instead, which is what no-sugar and reduced-sugar jams use. If sugar rather than pectin is your trigger, the type on the box decides the outcome / Graded C for salicylates and C for oxalate, which traces to the raw material: it is made from citrus peel and apple pomace, and peel is where salicylates concentrate. A teaspoon stirred into a preserve is a small exposure, a daily supplement dose is not / It is doing invisible jobs beyond jam. Pectin thickens low-fat dressings and baked goods as a fat replacer, keeps juice cloudy, stabilises drinking yoghurt and sets pectin gummies, which are the vegan alternative to gelatin ones. That means it is easy to eat several times a day without noticing / Graded B for glutamates and B for nickel. Both are moderate rather than high, and neither is likely to matter at jam-sized portions, but they are worth knowing if you are stacking several fibre supplements
