About Wild boar
Wild boar and the plain boar entry are the same animal recorded in two different states, and the grades say so.
Boar is marked mild for histamine; wild boar is marked moderate, and picks up mild marks for histamine liberation, tyramine and free glutamate that the other row does not carry. That is not the data contradicting itself. It is the difference between a carcass butchered promptly and the wild boar most people actually buy, which was shot, field dressed, hung at a game dealer and then vacuum packed for a week before it reached a counter. Amines build at every one of those stages. Everything outside the amine column stays clean: no gluten, no lactose, no FODMAPs, no salicylate, oxalate, nickel, sulfite or added nitrite in the fresh meat.

- Ask how long it hung. Hanging and long vacuum-packed chilled storage are what put this row above the plain boar row, and both are invisible on the label. Buy it dated and freeze on the day if amines are what you track.
- Braising does not help. Wild boar is nearly always cooked long and slow in red wine, and histamine and tyramine are heat stable, so the meat keeps its amine load while the wine adds histamine and sulfites on top.
- If farmed pork sits fine and wild boar does not, this grade difference is the likeliest explanation, not the species. They are the same animal, so an alpha-gal reaction or a genuine pork protein allergy would hit both.
- Wild boar in parts of Bavaria and central Europe still carries elevated radiocaesium decades after Chernobyl, because boar root for deer truffles that concentrate caesium underground. A 2023 isotope analysis attributed a large share of it to nuclear weapons fallout from the 1960s rather than to Chernobyl alone. Animals taken in those zones are measured before sale.
- The parasite cautions from the boar entry apply here in full. Cook it through to an internal 74C (165F) with a probe, and take particular care with liver and with raw or lightly cured liver sausage.

Why is wild boar graded higher for histamine than boar?
Because the two rows describe different points in the same animal life. The boar entry reflects the meat close to butchering, and it is graded mild. This entry reflects the wild boar that reaches a shop or restaurant, which has been shot in the field, hung by a game dealer for flavour and tenderness, and often vacuum packed for days afterwards. Histamine is produced by bacteria over time, so a longer route from field to plate produces a higher number even though the animal is identical.
Is wild boar high in histamine?
Moderate rather than high, which for most people means it is dose and freshness dependent rather than off limits. It also carries mild marks for tyramine, free glutamate and histamine liberation, so it stacks more than the number alone suggests if you are already at your limit. The practical move is to treat wild boar like an aged product: buy it with a date, freeze it immediately, cook it once and do not keep leftovers in the fridge for days.
Is wild boar radioactive?
Some of it genuinely is, and it is the one game animal where this keeps being true. Boar dig for deer truffles, an underground fungus that takes up caesium and holds it, so boar in affected parts of Bavaria and neighbouring regions have stayed above limits long after other game returned to normal. Isotope work published in 2023 showed a substantial part of that caesium came from 1960s weapons testing rather than from Chernobyl, which explains why the levels have fallen so slowly. Boar shot in those areas is tested before it can be sold, so commercially bought meat is measured.
Can you eat wild boar if pork gives you symptoms?
It depends entirely on which mechanism is causing it. If you react to bacon, ham and salami but not to a fresh pork chop, the problem is the cure, and fresh wild boar is graded clean on nitrites so it may well be fine. If your reactions are delayed by several hours after any mammalian meat, that is alpha-gal, and wild boar is the same species as pork so it will do the same thing. And if amines are your issue, wild boar is graded no better than pork on histamine and picks up mild tyramine and glutamate marks that pork does not, so it is not the upgrade it looks like.
