About Sturgeon
Sturgeon is the fish behind caviar, and that is where its trigger story diverges from its grades.
The fresh flesh scores low on histamine and clean on gluten, lactose, salicylate, oxalate, nickel and sulfites. But hardly anyone eats fresh sturgeon. What reaches most tables is hot-smoked sturgeon from an appetizing counter or salt-cured roe, and curing, smoking and cold-holding are exactly the conditions that build biogenic amines. Common questions about Sturgeon
Is sturgeon high in mercury?
Not in the sense that shark or Gulf tilefish are: sturgeon is not on the FDA and EPA "Choices to Avoid" list. It is worth moderating anyway, because sturgeon live for decades on the bottom and wild populations appear in local advisories with meal limits. Farmed sturgeon, which is almost everything on the market since wild trade is CITES-restricted, tests lower.
Is caviar high in histamine?
Caviar is a salt-cured product, and cured seafood generally runs higher in histamine than the fresh flesh it was made from. The fresh sturgeon meat grades low, so if you tolerate the fish but react to the roe, the curing and storage are the more likely explanation than the species.
Is smoked sturgeon safe for histamine intolerance?
Less safe than fresh. Hot-smoking then holding chilled for days at a deli counter is a textbook setup for histamine to accumulate, and histamine is heat stable so nothing you do afterwards removes it. If you tolerate low-histamine fish, buy sturgeon fresh or frozen and cook it yourself rather than starting with the smoked version.
