About Stout
Stout is a dark beer built on roasted barley, and that roast is the whole point: it is where the coffee and dark chocolate flavour comes from, and it is also why stout is gluten E like every other barley beer.
Roasting changes the colour and the taste of the grain, not its gluten, so a pint of stout is off limits for coeliac disease and for non-coeliac gluten sensitivity in exactly the way a pale lager is. Beyond gluten, fermentation gives it high histamine (D) with moderate tyramine (C) and moderate sulfites (C), the usual reason a beer drinker gets a flushed face, a blocked nose or a thumping head from one pint. It grades poorly for SIBO (D) but only B for FODMAPs, so the gut complaints people report are more often about alcohol and carbonation than about fermentable sugars. Despite tasting of coffee, plain stout is caffeine free (A).

- Gluten E. Roasted barley is still barley, and roasting does not degrade gluten, so stout is not safe on a coeliac diet no matter how dark or how dry it is
- Histamine D, the highest trigger on this page after gluten, produced during fermentation and made harder to clear because alcohol slows the diamine oxidase enzyme
- Milk stout, cream stout and sweet stout are brewed with added lactose that the yeast cannot ferment, so those styles carry lactose that a dry stout does not. The grades here describe a standard dry stout
- Moderate sulfites (C) and moderate tyramine (C) from fermentation, a combination that shows up as headache and flushing rather than gut symptoms
- Nitro stouts are poured with nitrogen rather than carbon dioxide, which gives the creamy head and much less dissolved gas. If your problem with beer is bloating and burping rather than gluten, that difference is real, but it changes nothing about the gluten or the histamine

Common questions about Stout
Does stout contain caffeine?
No. Stout grades caffeine A. The coffee and mocha notes come from roasted barley, which is roasted the same way coffee beans are and produces a similar set of dark, bitter flavour compounds, but barley contains no caffeine at any stage. The exceptions are coffee stouts and espresso stouts brewed with real coffee added, which do carry caffeine, and they are usually labelled as such.
Is stout gluten free?
No. Stout is brewed from barley, so it grades gluten E. Dark colour and a dry roasted finish tell you nothing about gluten content. Be careful with beers labelled gluten removed or gluten reduced, which are barley beers treated with an enzyme that breaks up gluten fragments: coeliac organisations do not consider them safe for coeliac disease, because current testing cannot reliably confirm the fragments are gone. A beer brewed from sorghum, rice or millet is a different thing entirely.
Is stout better or worse than lager for histamine intolerance?
Much the same. Stout grades histamine D, which is where most fermented beer sits, and the roast character has no bearing on it. What tends to differ between one pint and the next is how long the beer was conditioned and whether it is bottle conditioned with live yeast, since more time and more microbial activity means more biogenic amines. That is a per-beer question rather than a per-style one.
Why does stout feel heavier on my stomach than other beer?
Partly perception and partly real. Stout grades FODMAPs B, so the fermentable sugar load is not unusual for beer, but stout is typically served in a full pint, is higher in residual sweetness in the sweet styles, and the roasted grain gives a thick mouthfeel that reads as heavy. Where it does score badly is SIBO (D), where the alcohol and residual sugars are the issue rather than the roast.
