- Snail is a mollusc, not a crustacean. Allergy to one group does not imply allergy to the other, since the sensitisation patterns differ, but molluscs do share tropomyosin as a major allergen across the group.
- Mite and snail syndrome is the genuinely useful fact here. House dust mite tropomyosin cross reacts with snail tropomyosin closely enough that people with strong dust mite allergy have had severe reactions to snail the very first time they ate it, with no prior exposure to sensitise them.
- Escargot is a delivery mechanism for garlic butter. A reaction to a plate of snails is at least as likely to belong to the garlic, the butter or the bread as to the mollusc.
- Undercooked snails carry a real parasite risk. Angiostrongylus cantonensis, the rat lungworm, uses snails and slugs as intermediate hosts and can cause eosinophilic meningitis. This is a reason to eat properly cooked snails from a commercial source rather than foraged ones.
- Wild caught snails need purging before cooking, since whatever they have been eating is still in them.

Can I eat snails if I am allergic to shellfish?
It depends which shellfish. Snails are molluscs, so they sit with mussels, clams, oysters, squid and abalone rather than with prawns, crab and lobster, which are crustaceans. The two groups are often lumped together on menus but allergy to one does not automatically mean allergy to the other. Molluscs do share tropomyosin as a major allergen among themselves, so if you react to mussels or squid, snail is a genuine risk. If your allergy is specifically to crustaceans, snail is less predictable and worth discussing with an allergist rather than testing over dinner.
What is mite and snail syndrome?
It is a cross reactivity in which people allergic to house dust mites react to snail, and it is one of the clearer examples of why allergy does not always follow what you have eaten before. Dust mite and snail both carry tropomyosin, and the two versions are similar enough that antibodies raised against the mite recognise the snail. The practical consequence is unusual: reactions have occurred on a first ever exposure to snail, because the sensitisation happened through breathing dust rather than through eating. If you have significant dust mite allergy, escargot deserves caution.
Are snails safe to eat?
Commercially farmed and properly cooked snails are safe and ordinary food. Two things make them unsafe. Undercooking matters because snails and slugs are intermediate hosts for the rat lungworm, Angiostrongylus cantonensis, which can cause eosinophilic meningitis, so they need to be thoroughly cooked rather than warmed through. Foraging matters because wild snails need purging first, since the contents of their gut are the contents of whatever they have been eating, and garden snails may have crossed treated ground.
