About Scotch

Scotch is malt or grain whisky matured in oak in Scotland, and the question people search most is the barley one: it is made from malted barley yet grades A for gluten, because the gluten protein is far too large to travel with the alcohol vapour during distillation.

What actually separates scotch from a young bourbon or a blended whiskey is the ageing and the smoke. Minimum three years in cask, often ten to twenty, frequently finished in barrels that previously held sherry, and in Islay styles dried over peat fire. That maturation is why scotch grades tyramine C, a notch above the B we give whiskey and vodka, alongside histamine C and sulfite B.

  • Tyramine grades C, higher than most spirits we cover, which matters if you get migraines from aged foods or take an MAOI: long cask maturation and sherry cask finishing are the plausible routes
  • Peated whiskies carry measurable smoke phenols, quoted in parts per million on the malt, and people who react to smoked or barbecued food often find heavily peated drams the hardest even though scotch grades only B for salicylates
  • Histamine grades C and the alcohol suppresses DAO, so a dram taken with cheese is a compound exposure rather than a single one
  • Scotch is a heavy congener spirit compared with vodka, and congener load tracks with how rough the next morning feels, which is worth logging separately from any food trigger
  • Cask strength bottlings can be over 50 percent alcohol, so a dram poured by eye may be nearly double a standard measure

Common questions about Scotch

Is scotch whisky gluten free if it is made from malted barley?

Yes in practice, and our data grades scotch A for gluten. Distillation separates by volatility, and gluten proteins are non volatile, so they remain in the pot rather than passing into the spirit. Coeliac organisations generally treat distilled spirits as safe for this reason. The exceptions to check are whisky liqueurs, cream liqueurs and flavoured bottlings, where something gluten containing can be added after distillation.

Is peated scotch worse than unpeated for sensitivities?

It can be, though not through any of the classic food chemistry columns. Peat smoke deposits phenolic compounds such as guaiacol and cresols onto the malt during drying, and these carry into the spirit. That is a different chemistry from salicylates, where scotch grades B, but if smoked fish, smoked paprika or barbecue reliably bother you, an Islay dram is a reasonable thing to log separately from a Speyside one.

Does sherry cask ageing change how scotch affects you?

It is the most common explanation for scotch grading tyramine C while lighter spirits sit at B. A sherry cask has held fortified wine for years, and the finishing period pulls wine derived compounds and cask congeners into the whisky. The absolute amine load is still small next to aged cheddar or salami, but it is not the near zero of an unaged spirit, so a sherry bomb and a young grain whisky are worth logging as different drinks.

Why does scotch give me a headache when vodka does not?

Two things stack. Scotch is a high congener spirit, meaning it carries far more of the flavour compounds that survive or develop during pot distillation and cask ageing, and congener heavy drinks are consistently reported as rougher than clean spirits at the same alcohol dose. On top of that, scotch grades histamine C and tyramine C, both of which are established headache triggers in sensitive people, while vodka sits a grade lower on each.
