About Rice flour

Rice flour is the backbone of almost every commercial gluten free flour blend, and it earns that job by being boringly clean.

Our data grades it A on gluten, on every FODMAP column, on histamine and histamine liberation, on salicylates, oxalate, nickel, lectins, sulfites and glutamates. There is very little in it to react to. The catch is not the flour, it is the bag: most products sold for gluten free baking are rice flour plus several other flours and gums, and those additions are what people actually react to. Read the ingredients list, not the front of the pack.

What trips people up

  • A bag labelled for gluten free baking is rarely plain rice flour. Chickpea or gram flour, soy flour, lupin flour and inulin or chicory root fibre are common blend partners and are the usual source of a FODMAP or legume reaction that gets blamed on rice
  • Glutinous rice flour, also sold as sweet rice flour or mochiko, contains no gluten. The name describes how sticky it cooks, not the protein
  • Graded borderline (B) for SIBO and inflammation. It is fast, fibre-free starch, so it ferments quickly and lands harder on blood sugar than an intact grain does
  • Cross contact still matters for coeliac disease. Rice flour is frequently milled on shared equipment with wheat, so certified gluten free is the safer buy even though rice itself is graded A
  • Brown rice flour keeps the bran, which brings more fibre and more of everything the bran carries. If white rice flour sits well and brown does not, the bran is the difference to test

Common questions about Rice flour

Is glutinous or sweet rice flour gluten free?

Yes, despite the name. Glutinous refers to the sticky, glue-like texture it produces, which comes from amylopectin starch, not from gluten protein. Mochiko, shiratamako and Thai sticky rice flour are all in this group and all grade A for gluten. As with any rice flour, buy certified if you have coeliac disease, because milling lines are the risk, not the grain.

Is rice flour low FODMAP?

Yes. Rice flour is graded A on total FODMAPs and on every individual column: fructans, GOS, excess fructose and polyols. It is one of the safest flours for an elimination phase. What trips people up is that most shelf blends dilute rice flour with chickpea flour or add inulin for texture, and both of those are high FODMAP.

Does rice flour cause bloating?

Not through FODMAPs, which are graded clean. Where it can contribute is fermentation speed: rice flour is graded B for SIBO because it is refined starch with the fibre removed, so it moves and ferments fast. In a bake it is also almost always combined with gums like xanthan or guar, which some sensitive guts notice on their own.

White or brown rice flour for a sensitive gut?

White rice flour is the more stripped-back option: the bran and germ are gone, so there is less fibre and less of the bran-bound compounds. Brown rice flour keeps them, which is better nutritionally but gives your gut more to work on. If you are early in an elimination, start with white and reintroduce brown later.
