About pumpkin seeds

Pumpkin seeds, also sold shelled as pepitas, are prized for zinc and magnesium but they are high in oxalate, which is the trigger that catches people out, especially anyone prone to kidney stones.

Raw seeds are also high in lectins, and they carry moderate nickel. They are low histamine and low FODMAP in a normal serve, so unlike sunflower or sesame their issue is really oxalate and lectin rather than gut fermentation.

Are pumpkin seeds high in oxalate?

Yes. Pumpkin seeds are a high-oxalate food, so if you have had calcium-oxalate kidney stones or you are on a low-oxalate diet, they are worth portioning rather than snacking on freely. Pairing them with a calcium source and staying well hydrated helps blunt oxalate absorption.

Are pepitas the same as pumpkin seeds?

Yes. Pepitas are simply hulled, green pumpkin seeds, usually from naked-seed pumpkin varieties. Nutrition and triggers are the same, so the oxalate, lectin and nickel notes here apply to both the in-shell seeds and the shelled pepitas.

Do pumpkin seeds need to be soaked or roasted?

For lectins, yes it helps. Raw pumpkin seeds are relatively high in lectins, and soaking, sprouting or roasting lowers them, which is why most people tolerate roasted pepitas better than raw ones. It does not meaningfully change the oxalate, so portion size still matters for stone risk.
