About Mulled wine
Mulled wine is red wine simmered with cinnamon, cloves, star anise, orange and sugar, and its trigger story is an amine story.
It grades high in histamine (D) and high in tyramine (D), the two biogenic amines red wine picks up during fermentation and ageing. Heating does not clean that up, because both amines are heat stable: an evening on the hob reduces the liquid and concentrates what is already in the pot. Alcohol then slows diamine oxidase, the enzyme that clears dietary histamine, so a warm mug delivers a load and blunts your ability to process it at the same time. Moderate sulfites (C) from the wine and a moderate FODMAP and fructose load (both C) from the sugar, juice and fruit finish the picture. If red wine already gives you flushing, a stuffy nose or a next-morning headache, the mulled version is usually the harsher form of the same drink, not a gentler one.

What trips people up
- Two amines at once: histamine D and tyramine D. Tyramine matters especially if you take an MAOI or get amine-pattern migraines, and histamine drives the flushing, congestion and hives side
- The pot itself is the problem. Mulled wine at a Christmas market, a carol service or a party is held warm and topped up for hours, and reheating concentrates biogenic amines rather than driving them off
- Alcohol inhibits diamine oxidase, so the same mug both supplies histamine and reduces the enzyme that clears it. This is why people report reacting to mulled wine at doses of ordinary wine they tolerate
- Sulfites grade C, moderate, carried over from the wine. That is a separate wheeze-and-headache trigger from the amines and it is not affected by simmering
- Nordic glogg is served with raisins and blanched almonds dropped in the glass, and raisins are sulfite E and histamine C in their own right, so the garnish adds to the load

Common questions about Mulled wine
Does heating mulled wine burn off the histamine?
No. Histamine and tyramine are heat stable, so simmering does not destroy them. Simmering does evaporate some alcohol and some water, which means a pot held warm for a few hours slowly concentrates the amines in what is left. The practical rule is the opposite of the intuition: the later mug from a pot that has been sitting all evening is the riskier one.
Why does mulled wine affect me more than a normal glass of red?
Three things stack. The wine base is already high in histamine and tyramine, the alcohol slows the diamine oxidase enzyme that would otherwise clear that histamine, and the drink is warm and sweet so it tends to go down faster and in larger servings than a measured glass of red. Add the sugar and citrus stirred in and a single mug carries more of everything than the glass it started as.
Is alcohol-free mulled wine any safer?
The grades on this page describe the alcoholic version. Shop-bought alcohol-free mulled wine is usually built on grape or apple juice with the same mulling spices, so it drops the alcohol and the fermentation amines, which is the largest part of the problem for histamine intolerance. It keeps the sugar though, and juice bases can be heavier on fructose and FODMAPs than wine is, so it can still be a bloating trigger.
Are the mulling spices the trigger, or the wine?
Almost always the wine. Mulled wine grades only B for salicylates, moderate, even though cinnamon, cloves and orange peel are salicylate-rich foods, because the quantity infused into a mug is small. The histamine D and tyramine D grades come from the wine base. If you react to mulled wine but drink spiced herbal teas without trouble, that is the pattern you would expect.
