About Flounder

Flounder is a lean flatfish and one of the calmest proteins on the board: clean grades for salicylates, oxalates, nickel, sulfites, glutamates, tyramine, gluten and every FODMAP column.

Its two non clean grades are both mild and both explainable. It sits at borderline for histamine, which reflects ordinary fish freshness rather than scombroid risk, and at mildly rather than strongly anti inflammatory, because a lean white fish carries a fraction of the omega 3 in salmon or trout. If you are rebuilding a diet after an elimination phase, flounder is usually one of the early safe proteins.

What trips people up

  • Not a scombroid species. The seafood histamine scares come from dark fleshed, high histidine fish such as tuna, mackerel, mahi mahi and sardines. Flounder is white, lean and low in histidine, which is why it grades borderline rather than high, but it still has to be kept properly cold
  • Finned fish is one of the food groups removed on an EoE elimination diet, so flounder is marked incompatible there. That is an allergen classification, not a food chemistry trigger
  • Rated mildly anti inflammatory rather than strongly, so if you are eating fish specifically for omega 3, flounder is not doing that job
  • The trigger usually arrives with the preparation, not the fish: breadcrumbs and dusting flour bring wheat, stuffed flounder brings crab or cream, and a caper and butter pan sauce adds histamine that the fillet itself does not have

Common questions about Flounder

Is flounder high in histamine?

No. Flounder grades borderline, which is the baseline for fresh fish rather than a warning about the species. Histamine builds when bacteria convert the amino acid histidine in fish flesh, and the high histidine species are the dark fleshed ones like tuna, mackerel and mahi mahi. Flatfish are low in histidine, so a well handled flounder fillet is one of the safer fish on a low histamine plan. Buy it cold, cook it soon and skip the leftovers.

Is flounder low FODMAP?

Yes. Plain flounder grades clean on total FODMAPs and on every individual column: fructans, GOS, excess fructose, polyols and lactose. Like all meat and fish it contains no carbohydrate to ferment. Anything that makes a flounder dish upset a sensitive gut is in the garlic butter, the onion in the stuffing or the breadcrumb coating.

Is flounder the same as sole?

They are close relatives and frequently confused at the counter. Both are flatfish, and a good deal of the fillet sold as sole in the United States is actually flounder, while lemon sole is itself a flounder rather than a true sole. For trigger purposes they behave similarly, but they are graded separately here because their sourcing and market handling differ.

Is flounder low in mercury?

Yes. Flounder sits in the FDA and EPA Best Choices category, the lowest mercury group, alongside haddock, pollock, tilapia, salmon and shrimp. That is the group recommended two to three times a week during pregnancy, which makes it one of the least restricted fish on the list.
