About Cranberry sauce
Cranberry sauce is graded on the sugar, not the berry.
A standard recipe is close to equal parts fruit and sweetener by weight, and that is why the sauce grades moderate for excess fructose and moderate for FODMAPs, borderline on the inflammatory scale and poor for DASH. Everything else on the holiday table is louder: cranberry sauce grades clean on gluten, lactose, dairy protein, histamine, tyramine, nickel and sulfites.

- Moderate for FODMAPs and excess fructose, and both grades come from the added sugar rather than the cranberries. A spoonful beside the roast is a genuinely different dose from the bowl people keep going back to
- Jellied tinned versions are frequently sweetened with high fructose corn syrup, which grades high for fructose, high for FODMAPs and poor for fermentation in its own right. The tin you buy changes the answer
- Poor fit for DASH and only middling for a Mediterranean pattern, on sugar content alone. This is a confection built on fruit rather than a fruit side dish
- Clean across the classic food chemistry triggers, so at a Christmas or Thanksgiving table the cranberry sauce is rarely the culprit. Aged cheese, cured meat, stuffing and wine are the usual suspects

Is cranberry sauce low FODMAP?
It grades moderate rather than low, on overall FODMAPs and on excess fructose alike. Portion is the entire story: a tablespoon alongside a roast behaves very differently from a serving spoon, and the sugar is doing the work in both directions.
Why does cranberry sauce grade worse than fresh cranberries?
Because it is roughly half sugar. Fresh cranberries are one of the lowest sugar fruits going, which is exactly why nobody eats them raw and why every recipe compensates heavily. Cooking them down with that much sweetener is what pushes the excess fructose and FODMAP grades from clean up to moderate and drags the diet fit scores down with them.
Is cranberry sauce gluten free?
It grades clean on gluten, and it should be: cranberries, sugar and water contain none. The things to check are own brand versions that use a thickener or a spice blend, anything described as a relish or chutney, and of course sauce served over or inside a pastry element.
Is cranberry sauce safe on a low histamine diet?
It grades clean on histamine content, on histamine liberation and on tyramine, so it is usually one of the safer things on a festive plate. Cranberry sauce is cooked and sugar preserved rather than aged or fermented, which is the reason it avoids the amine problem that catches out most of the other traditional accompaniments.
