About Barracuda

Barracuda is the fish that ciguatera is named after in practice.

Every trigger column we grade comes back quiet: clean on gluten, lactose, FODMAPs, salicylates, oxalates, nickel, sulfites, nitrites, free glutamate, lectins and nightshade, with only moderate histamine and moderate tyramine, the ordinary amine grades any dark-fleshed fish gets. None of that is the reason barracuda has a reputation. Barracuda is an apex predator on coral reefs, and ciguatoxin climbs the reef food chain and concentrates in exactly that position. The toxin is heat stable, tasteless and invisible, so nothing you do in a kitchen touches it, and barracuda is the single species most often behind ciguatera cases in Miami-Dade County, the highest-incidence area in the United States.

What trips people up

  • Ciguatoxin is not destroyed by cooking, and that is the entire point. It survives grilling, frying, boiling, freezing, smoking, salting, drying and marinating, it has no taste or smell, and it does not change the look of the flesh. A ciguatoxic barracuda is indistinguishable from a safe one at every stage between the water and the plate
  • The toxin originates with Gambierdiscus, a dinoflagellate that grows on reef algae and dead coral. Grazing fish take it in, predators eat the grazers, and it biomagnifies upward. Barracuda sits at the top of that chain, which is why size is the practical rule of thumb: an older, heavier barracuda has spent longer accumulating, and large reef predators are the ones public health advice tells you to avoid
  • Do not substitute another reef predator and think the problem is solved. Grouper, snapper, amberjack, moray eel and hogfish carry ciguatoxin through the same mechanism. The alternatives that genuinely sidestep it are non-reef fish: farmed salmon and trout, freshwater tilapia, cold-water whitefish
  • The symptom that identifies it is sensory, not digestive. After a day or two of vomiting, diarrhoea and cramps, ciguatera turns neurological, and its signature is cold allodynia, where cool water or a cold glass registers as burning or electric pain. Numbness, tingling and itching go with it, and while the gut phase clears in a few days the nerve symptoms can run for weeks to many months and recur
  • Recovery has a diet attached to it. Guidance for people who have had ciguatera is to avoid reef fish, fish sauces, shellfish, nuts and nut oils, caffeine and alcohol for months afterwards, because those can provoke a relapse of symptoms without any new exposure to the toxin
  • Separately from all of that, histamine and tyramine both grade moderate (C), the ordinary handling-driven amine load of an oily-fleshed fish. Not vegan or vegetarian

Common questions about Barracuda

Does cooking barracuda destroy ciguatera toxin?

No. Ciguatoxins are heat stable and pass through every kitchen process intact: boiling, steaming, frying, baking, grilling, freezing, smoking, salting, drying and acid marinating all leave them fully active. Gutting the fish does not help either, because the toxin is in the muscle as well as the organs, though liver and roe concentrate it most. This is the fundamental difference between ciguatera and the bacterial risks people are used to managing, where heat is the answer.

How can you tell if a barracuda has ciguatera before eating it?

You cannot, and none of the folk tests work. Ciguatoxin is odourless, tasteless and colourless, and it does not change the texture or appearance of the flesh, so a contaminated fish looks and tastes exactly like a clean one. Silver coins turning black, flies avoiding the flesh, cats refusing it and ants leaving it alone are all traditional tests, and none of them detects the toxin reliably. The only real controls are avoiding large reef predators altogether, and paying attention to which reefs and which islands have a history of cases, since the risk is intensely local.

Why does cold water feel like burning after eating barracuda?

That is cold allodynia, the most distinctive feature of ciguatera poisoning. Ciguatoxin binds voltage-gated sodium channels in nerve endings and makes them fire far too readily, so cold-sensing fibres send a pain signal at a temperature that would normally register as merely cool. People describe holding a cold drink as an electric shock, or a cold shower as scalding. It is sometimes called temperature reversal. It typically comes on after the gut symptoms have settled and can persist for weeks or months, and it is a strong enough signal that clinicians use it to distinguish ciguatera from ordinary food poisoning.

Is a barracuda reaction the same as a histamine or scombroid reaction?

No, and confusing the two leads people to the wrong conclusion about their own tolerance. Scombroid is histamine poisoning from spoiled fish, comes on within minutes as flushing, headache and a peppery taste, resolves within hours, and is prevented by proper chilling. Ciguatera is a marine biotoxin that has nothing to do with freshness, starts with vomiting and diarrhoea, and leaves behind long-running nerve symptoms that no antihistamine addresses. Barracuda grades moderate for histamine like most fish, so scombroid is possible, but the neurological picture belongs to ciguatera alone and warrants urgent medical attention.
