About Vanilla Bean

A vanilla bean is the cured seed pod of a climbing orchid, and in a trigger diary it behaves like one of the quiet ingredients: gluten, lactose, dairy protein, caffeine, nightshade, sulfite, nitrite and every FODMAP subgroup grade A, and salicylates are the only borderline mark at C, which is unremarkable for any concentrated dried plant. It is also the second most expensive spice in the world after saffron, and that price is the more useful fact for anyone reading labels. Almost all the vanilla flavour in packaged food is synthetic vanillin rather than bean, so when a vanilla-flavoured product causes a problem, the pod is rarely the part worth suspecting.

What trips people up

  • Salicylates are the only borderline grade (C), and dose keeps it small: half a pod scraped through a custard is a fraction of a gram of plant material
  • Vanilla flavour in most packaged food is synthetic vanillin, produced from guaiacol or wood lignin rather than from pods. It is chemically the same molecule but arrives with none of the other several hundred compounds a real bean carries, and inside a formula that has plenty else in it
  • Vanilla extract is a separate entry with a separate profile. It is bean steeped in alcohol, and cheaper bottles can carry added sugar, corn syrup or caramel colour that the pod itself does not
  • A white frosting on a stored pod is usually vanillin crystallising out, a sign of a good bean rather than spoilage. Fuzzy or musty growth is genuine mould from damp storage and the pod should go
  • Price makes vanilla one of the more adulterated spices, so bargain pods and bargain extracts are both worth reading carefully

Common questions about Vanilla Bean

Is vanilla bean a common food trigger?

No. It grades A for gluten, lactose, dairy protein, caffeine, nightshade, sulfites and all the FODMAP subgroups, with salicylates the single borderline grade at C. Since a recipe uses a fraction of a pod, even that grade rarely translates into a meaningful exposure. If vanilla-flavoured foods are a problem for you, the rest of the product is the more likely culprit.

Why are vanilla beans so expensive?

The orchid has no pollinator outside its native Mexico, so every flower is pollinated by hand, using a technique worked out by Edmond Albius on Reunion in 1841. Each flower opens for less than a day, the pod then takes months on the vine, and curing takes several more months of alternating sweating and drying. That labour is why vanilla sits second only to saffron by weight.

Is vanilla from a bean different from synthetic vanillin?

Vanillin is the dominant aroma compound in both and is molecularly identical whichever way it is made, but a cured pod contains hundreds of additional compounds that synthetic vanillin does not. The practical difference for a trigger journal is context: a pod is one ingredient, whereas a vanilla-flavoured product is a whole formula.

Is vanilla bean low FODMAP?

Yes. Fructans, GOS, excess fructose and polyols all grade A, and so does the total FODMAP score. Vanilla flavour is a common one to worry about because it turns up in sweetened products, but the pod itself is not what makes those products a problem.
