About Sparkling wine
Sparkling wine is the highest-sulfite drink most people put in a celebration glass.
It grades high on sulfites (D), well above still reds on this chart, because pale, delicate base wines are the ones winemakers protect hardest with sulfur dioxide, and more goes in with the sweetening dosage added just before the cork. Everything else about it sits in moderate territory: histamine, tyramine, salicylates, oxalates and residual fructose are all graded C, not high. It is also graded poorly for SIBO and pro-inflammatory, which is the alcohol and the leftover sugar rather than anything unique to the bubbles. If a glass tightens your chest or blocks your nose within minutes, sulfites deserve the first look.

What trips people up
- Graded high on sulfites (D). Sulfur dioxide goes in at pressing, again before bottling, and again in the dosage. Anything above 10 mg per litre has to be declared, which is why nearly every bottle says contains sulfites.
- Sulfite reactions look different from a histamine flush: wheeze, chest tightness, a blocked nose or a cough coming on within minutes of the first mouthful. People with asthma are the group most likely to notice it.
- Only moderate on histamine and tyramine (both C). This is not the high-histamine end of the wine shelf, so if your reaction is instant and respiratory rather than a slow flush, sulfites fit better than histamine.
- Graded poorly for SIBO and low fermentation diets, with moderate residual fructose. Drier styles carry less: brut nature and extra brut get almost no dosage sugar, while sec and demi-sec carry a lot.
- Graded pro-inflammatory (D) and not paleo or AIP compliant, though it is vegan and vegetarian friendly and clean on gluten and lactose.

Common questions about Sparkling wine
Does sparkling wine contain sulfites?
Yes, and it grades high on them. Some sulfur dioxide forms naturally during fermentation, but most of it is added deliberately: at the press to stop oxidation, before bottling to keep the wine fresh, and in the dosage liqueur used to sweeten and top up the bottle. Pale sparkling wines get more of this protection than robust reds do, which is why they land at the higher end of the sulfite scale.
Why does sparkling wine make me wheeze or block up my nose?
That pattern is far more typical of sulfites than of histamine. Sulfur dioxide released from the wine irritates the airways directly, so symptoms arrive within minutes and are respiratory: cough, wheeze, chest tightness, a stuffy nose. A histamine reaction tends to build more slowly and shows up as flushing, hives and a headache. Sensitivity to sulfites is most commonly reported by people with asthma.
Is sparkling wine high in histamine?
As a category it grades moderate, not high. Most sparkling wine is made from young, pale base wine that never sees the long skin contact or barrel time that pushes red wine to the top of the histamine scale. Individual bottles vary a lot though: traditional-method bottles aged for years on the lees pick up considerably more than a fresh tank-method fizz, so the style you choose matters more here than with still wine.
Does brut sparkling wine have less sugar than sweeter styles?
Yes, and the label tells you exactly how much. Sweetness comes from the dosage added at disgorgement, and the terms are legally defined: brut nature has essentially none, extra brut and brut very little, while sec, demi-sec and doux climb steeply. If fermentable sugar is what upsets your gut, the driest end of the shelf is the practical choice, though it does nothing about the sulfites.
