Overview

About Salsa

Salsa reads as a fresh vegetable dip, but its base of onion and garlic makes it high in fructans and high FODMAP overall, so it is a common cause of bloating and gas for people with IBS.

On top of that it stacks tomato and chilli, so it carries a moderate nightshade and histamine load too. A homemade batch with the onion and garlic left out is far gentler than most jarred versions.

How Salsa scores

Watch for

What trips people up

  • High in fructans and high FODMAP because of the onion and garlic, a frequent trigger for bloating, cramps and gas in sensitive guts
  • Contains tomato and chilli, so it adds a moderate nightshade load if you react to peppers or eggplant
  • Tomato base gives it moderate histamine, worth noting if ripe or fermented ingredients set you off
  • Jarred salsa often has extra concentrated tomato and preservatives, so it tends to be a stronger trigger than a quick fresh chop

FAQ

Common questions about Salsa

Is salsa low FODMAP?

Standard salsa is not. The onion and garlic that give it flavour are high in fructans, which pushes the whole dip into the high-FODMAP range and commonly triggers bloating and gas in people with IBS. A version made without onion or garlic, using the green tops of spring onion or chive instead, can be tolerated in small amounts.

Why does salsa give me gas and bloating?

The main culprit is the fructans in raw onion and garlic, a type of FODMAP your gut ferments quickly. Tomato adds a little more fermentable load. Cutting the onion and garlic is usually the single biggest fix.

Is fresh salsa better than jarred for triggers?

Often yes. Fresh pico or salsa lets you control or skip the onion and garlic and skips added preservatives, while jarred salsa concentrates tomato and can include extra additives. The nightshade content stays the same either way, so fresh mainly helps with the FODMAP and additive side.
