About Mead
Mead is honey wine, made by fermenting honey with water and yeast, and it is probably the oldest alcoholic drink humans made.
The base ingredient decides most of its trigger profile. Honey grades at the very top of the excess fructose scale, and mead lands one step below that at high, because yeast eats a good share of the sugar but leaves plenty of fructose behind. Total FODMAP grades high for the same reason. The fermentation adds the second story: mead grades high for histamine, which matters because alcohol also suppresses the enzyme that clears histamine. It also picks up moderate sulfites, moderate tyramine and moderate salicylates. The one clean headline is grain: mead is honey, water and yeast, so it grades clean on gluten.

- High excess fructose. Honey is the textbook food with more fructose than glucose, and fermenting it removes some of the load rather than all of it
- High histamine for a fermented drink, and the alcohol itself slows histamine clearance, so flushing, blocked nose or headache can arrive faster than the alcohol content alone would explain
- High total FODMAP with moderate fructans. Sweet and dessert styles keep far more residual honey sugar than a bone-dry mead, and the style range here is enormous
- Moderate sulfites: most commercial meads are stabilised the way wine is, though the grade sits below what white wine carries
- Clean on gluten, lactose, dairy protein and free glutamate, which makes it a genuine option for coeliac drinkers even though it is difficult on sugar

Common questions about Mead
Is mead high in fructose?
Yes. Mead grades high for excess fructose, inherited directly from honey, which grades at the very top of that scale. Fermentation converts a share of the sugar to alcohol, which is why mead sits a step below raw honey rather than level with it. A bone-dry mead, fermented until the yeast runs out of food, carries less residual fructose than a sweet or dessert mead, so style matters more here than with most drinks.
Is mead gluten free?
Yes on our grades. Mead is fermented from honey, water and yeast with no grain anywhere in the process, and it grades clean on gluten. That makes it one of the few traditional fermented alcoholic drinks a coeliac can reach for without checking. The exception is flavoured or hybrid styles: a braggot is mead brewed with malted barley, and some spiced or barrel-aged bottles add grain-derived ingredients, so read the label on anything that is not plain mead.
Can you drink mead with histamine intolerance?
It is one of the harder drinks. Mead grades high for histamine and moderate for tyramine, and alcohol independently inhibits diamine oxidase, the enzyme that breaks histamine down in the gut. That combination is why a single glass can produce flushing, a stuffy nose or a headache out of proportion to the amount drunk. Distilled spirits, which leave the amines behind in the still, grade lower.
Does mead contain sulfites?
Usually some. Mead grades moderate for sulfites because most commercial meadmakers stabilise the finished drink with sulfite the same way winemakers do, to stop refermentation in the bottle. That still sits below white wine, which grades high for sulfites. Small-batch and unstabilised meads exist and carry less, but they are not the default on a shop shelf.
