About Carrot juice

Carrot juice keeps the clean chemistry of the carrot: no histamine, no salicylate flag, no oxalate, no nickel, no nightshade.

What juicing changes is the load. Stripping the fibre out and pressing several carrots into one glass turns a low FODMAP vegetable into a moderate FODMAP drink, and it rates borderline on low-fermentation and SIBO protocols where the whole root rates clean. Drink enough of it daily and it can also tint your palms orange, which is harmless.

Is carrot juice low FODMAP if whole carrots are?

Not equally. Whole carrot root grades low FODMAP, while carrot juice grades moderate, because juicing concentrates the sugars of several carrots into one serving and removes the fibre that slows their arrival. If carrots have never bothered you but carrot juice does, portion and format are the difference, not the vegetable.

Why is carrot juice harder on SIBO than eating carrots?

Low-fermentation and SIBO protocols care about how much fermentable sugar hits the small intestine at once. Juice delivers it fast, in bulk, and without fibre, so carrot juice rates borderline on that column while the whole root rates clean. If you are following a SIBO plan, eating the carrot cooked or raw is the safer form.

Can carrot juice turn your skin orange?

Yes, and it is one of the more common causes of carotenemia. Beta-carotene builds up in the outer skin layer, showing first on the palms and soles, and it fades over a few weeks once you cut back. It is harmless. The distinguishing sign from jaundice is the eyes: carotenemia leaves the whites of the eyes clear.

Is carrot juice safe on a low histamine diet?

The juice is graded low in histamine and is not a liberator, so the carrot itself is fine. The catch with any juice is freshness: drink it soon after opening or pressing, keep it cold, and be wary of a bottle that has been open for days, since histamine climbs in food left sitting.
