About Beet greens
Beet greens are the leafy tops of the beet plant, cooked like chard because they are essentially the same species.
They are quiet on the triggers most people worry about: low histamine, no tyramine, no free glutamate, gluten free, no sulfites and low FODMAP on every subgroup, which makes them the easier half of the plant for a sensitive gut since the root itself carries moderate fructans and polyols. The one thing beet greens are genuinely known for is oxalate. If you have a history of calcium oxalate stones, boiling them and discarding the water pulls out a large share of the soluble oxalate, and eating them with a calcium source binds more of it in the gut.
- The greens are the low-FODMAP half of the beet plant. Every FODMAP subgroup grades clean on the leaves, while the root carries moderate fructans and polyols, so if borscht or roasted beets bother you the root is the likelier culprit.
- Naturally high in dietary nitrate, as dark leafy greens and beets both are. This is plant nitrate, not the curing nitrite used in bacon and ham, and beet greens grade clean on nitrites. Still worth logging the portion if nitrate-rich foods track with your headaches, or if you take nitrate medication.
