About Sucralose

Sucralose is made by replacing three hydroxyl groups on ordinary sugar with chlorine atoms, which makes it roughly 600 times sweeter than sucrose and largely indigestible.

Most of a dose passes straight through the gut, and that is why it grades clean on the classic food-chemistry triggers: no gluten, no lactose or dairy protein, no histamine, no tyramine, no sulfites, no nightshade content, and unlike the sugar alcohols it is not a polyol. Two things catch people out. Sucralose is not stable at baking temperatures, which is why some products carry a quiet warning against cooking with them. And the granulated sucralose sold in packets and bags, Splenda included, is mostly maltodextrin or dextrose by weight, which is where the calories and the blood sugar response come from. It also rates poorly on low-fermentation and SIBO protocols and sits well outside DASH and Mediterranean eating patterns.

What trips people up

  • Heat sensitive. Sucralose begins to degrade above roughly 120C and can form chlorinated breakdown products, and German risk assessors have advised against heating foods sweetened with it to frying or baking temperatures. That is the reason some tabletop products say they are not intended for baking.
  • Packet and granulated versions are mostly bulking agent. Maltodextrin or dextrose makes up the volume, carries the calories the label rounds down to zero, and maltodextrin has a higher glycaemic index than table sugar, so heavy users can see a genuine blood sugar bump from a supposedly zero-calorie sweetener.
  • Rated poorly for low-fermentation and SIBO plans, which routinely exclude non-nutritive sweeteners. If bloating started when you switched to sucralose, the bulking agent deserves as much suspicion as the sweetener itself.
  • Rated pro-inflammatory and a poor fit for DASH and Mediterranean patterns, both of which push you toward reducing sweetness rather than swapping one intense sweetener for another.
  • Clean on gluten, dairy, histamine, tyramine and sulfites, so when a diet drink reliably bothers you it is worth reading past the sweetener to the acids, colours and preservatives in the same can.

Common questions about Sucralose

Can you bake with sucralose?

Not reliably. Sucralose starts to break down above roughly 120C, and the degradation products include chlorinated compounds such as chloropropanols, which is why European risk assessors have advised against heating sucralose-sweetened foods to frying or baking temperatures and why some tabletop products state they are not for baking. Granulated blends also behave differently in a recipe because the bulk is maltodextrin or dextrose rather than sweetener, so browning and texture will not match sugar.

Does sucralose have calories or raise blood sugar?

Pure sucralose contributes essentially nothing, since most of it is never absorbed. The retail product is a different story: packets and granulated bags are bulked with maltodextrin or dextrose, so each packet carries a few calories and a small carbohydrate load. Maltodextrin has a higher glycaemic index than table sugar, so someone using many packets a day can measure a real blood glucose response from a product labelled zero calorie.

Does sucralose cause bloating and gas?

It can, and it grades badly for low-fermentation and SIBO protocols. Worth knowing is that sucralose is not a polyol, so it does not have the osmotic pull that sorbitol, xylitol or erythritol have. When a sucralose product causes gut symptoms the maltodextrin bulking agent is a likely candidate, so trying a liquid or pure sucralose form is a cheap way to test which part is the problem.

Is sucralose gluten free and safe with histamine intolerance?

Yes on both counts. Sucralose contains no gluten and no histamine, and it also grades clean on tyramine, sulfites, dairy protein and lactose. The maltodextrin used as a bulking agent is sometimes wheat derived, but it is processed to the point that regulators class it as gluten free, so it does not change the answer for coeliac disease.
