About Stevia
Stevia is an intense sweetener made from steviol glycosides, the sweet compounds isolated from the Stevia rebaudiana leaf.
It is clean on nearly every food chemistry trigger we track: histamine A, histamine liberator A, nickel A, sulfite A, glutamate A and, importantly, polyols A, because stevia is not a sugar alcohol and therefore not a polyol FODMAP the way erythritol, xylitol and sorbitol are. Salicylate and oxalate are unrated for it, so we make no claim either way there. Where it does grade badly is low fermentation SIBO at E, since steviol glycosides are broken down by colonic bacteria rather than absorbed intact in the small intestine. The other half of the story is the packet itself. Most retail stevia is only a few percent steviol glycoside by weight, bulked out with erythritol, dextrose or maltodextrin, and that bulking agent is very often what is actually causing the bloating people blame on stevia.

What trips people up
- Low fermentation SIBO grades E, so if you are managing SIBO or fermentation driven bloating this is the one column where stevia performs poorly
- Read the ingredient list, not the front of the pack. A sachet or spoonable stevia is mostly bulking agent, and erythritol is a polyol that our data grades E on polyols while pure stevia grades A
- The bitter or liquorice like aftertaste comes from which steviol glycosides were used: rebaudioside A and stevioside carry more of it than the newer minor glycosides, so two stevia products can taste quite different
- Overall FODMAP grade sits at B rather than A, which reflects the blended commercial products more than the glycosides themselves
- Anti inflammatory grades E and paleo or AIP grades E, so it is a diet compatibility note rather than a chemical trigger

Common questions about Stevia
Is stevia a FODMAP?
Not in the way sugar alcohols are. Stevia grades A on polyols, A on fructans, A on GOS and A on excess fructose, because steviol glycosides are not a polyol at all. The overall FODMAP grade of B reflects blended retail products rather than the pure sweetener. If a sweetener reliably bloats you, check whether what you are using is actually stevia or a stevia and erythritol blend, because erythritol is the polyol.
Why does stevia make me bloated if it is not a sugar alcohol?
Two separate reasons. The commonest by far is the bulking agent: table top stevia is usually erythritol or dextrose with a tiny amount of glycoside, and it is the bulk you are eating by volume. The second is that steviol glycosides themselves are not absorbed in the small intestine and are hydrolysed by gut bacteria in the colon, which is why we grade stevia E for low fermentation SIBO. A pure liquid glycoside drop avoids the first problem entirely.
Why does stevia taste bitter or like liquorice?
That aftertaste is glycoside specific rather than universal. Stevioside and, to a lesser degree, rebaudioside A carry a lingering bitter and liquorice note, while minor glycosides such as rebaudioside M and D are much cleaner tasting but far scarcer in the leaf. Cheaper products lean on the more bitter glycosides, so if you wrote stevia off on taste it is worth trying a different product before concluding you dislike the sweetener.
