About Saccharin

Saccharin is the oldest artificial sweetener, discovered in 1879, and it is still the one people ask about most because of the cancer scare.

It is clean on almost every food-chemistry trigger we track: no gluten, no lactose, no FODMAPs, no oxalate, no sulfites, no nickel, no caffeine and no tyramine. Its two honest caveats are gut tolerance (we grade it borderline for fermentation and SIBO, and human trials have found saccharin can shift the gut microbiome and glucose response in some people) and a mild borderline flag for histamine, histamine release and salicylate. If you are searching whether saccharin causes cancer, the short answer is that the 1970s rat bladder tumours came from a mechanism that does not exist in humans, and the US warning label was removed in 2000.

What trips people up

  • Borderline for gut fermentation and SIBO. Saccharin is not absorbed and passes through to the colon, and randomised human work has shown non-nutritive sweeteners including saccharin can alter gut bacteria and glycaemic response in a subset of people, which is the most plausible reason for bloating after a few sweetened drinks a day
  • Mildly flagged for histamine and histamine release, so it sits in the "watch it if you are reactive" band rather than the trigger band. If sweetened drinks reliably give you flushing or itching, log the brand, not just the sweetener
  • Tabletop packets are mostly not saccharin. A pink packet is largely dextrose with a bulking agent such as cream of tartar, so a reaction to the packet may be to the filler rather than the sweetener itself
  • Saccharin is chemically a sulfonamide (benzoic sulfimide). Cross reaction with sulfa antibiotic allergy is considered unlikely, but it is a real question worth raising with your clinician rather than guessing
  • Borderline for salicylate, not high. If you are on a strict salicylate elimination, saccharin is usually a lower-risk sweetener than fruit-derived or herbal ones

Common questions about Saccharin

Does saccharin cause cancer?

No. The scare came from 1970s studies in which very high doses of sodium saccharin produced bladder tumours in male rats. Male rat urine is unusually high in protein and pH and contains alpha-2u-globulin, and in that specific chemistry the sodium and saccharin load formed a crystalline precipitate that irritated the bladder lining. Humans do not produce that protein and do not form those crystals. The US National Toxicology Program removed saccharin from its Report on Carcinogens in 2000, and the congressionally mandated warning label was repealed the same year.

Is saccharin low FODMAP?

Yes. Saccharin contains no fructans, no excess fructose, no polyols and no lactose, so it does not carry FODMAP load the way honey, agave or sugar alcohols such as sorbitol and xylitol do. That said, we grade it borderline for gut fermentation, so a heavy daily intake in diet drinks can still be worth testing on a low FODMAP plan even though the sweetener itself is not the FODMAP.

Why does diet soda with saccharin upset my stomach if it has no sugar?

Because the sweetener reaches the colon intact. Saccharin is not metabolised for energy and is excreted largely unchanged, which means the gut microbiome sees it. Controlled human trials on non-nutritive sweeteners have found saccharin can change the composition of gut bacteria and the glucose response in some individuals, and the practical symptom is bloating or urgency rather than a classic food allergy. Carbonation and any other additives in the drink are also worth ruling out separately.

Is saccharin safe if you have histamine intolerance?

It is usually tolerated. We grade saccharin borderline rather than clean for both histamine content and histamine release, which puts it well below aged, fermented or cured foods but not in the completely inert category. If a saccharin-sweetened drink triggers symptoms, check the rest of the formula first, since colourings, preservatives and citrus flavourings in soft drinks are more common histamine culprits.
