About Acesulfame potassium

Acesulfame potassium, listed as Ace-K or E950, is an intense sweetener roughly two hundred times sweeter than sugar that your body does not metabolise at all: it is absorbed, passed through unchanged and excreted in urine, so it delivers no calories and no blood sugar response.

On the sensitivity columns it comes back A across the board, including gluten, lactose, dairy protein, histamine, salicylate, oxalate, nickel, sulfite and glutamate, and every FODMAP group including polyols is clean, so it does not behave like the sugar alcohols it often sits beside. The catch is that you almost never meet it alone. On its own it carries a bitter, slightly metallic finish, so manufacturers blend it with sucralose or aspartame to mask that, which means a reaction blamed on Ace-K is frequently a reaction to the blend. It is also graded E for low-fermentation and SIBO protocols and E for DASH, which are plan-fit calls about ultra-processed sweeteners rather than chemical trigger findings.

What trips people up

  • It is a blending sweetener, not a solo one. Check the full sweetener line on the label before attributing anything to Ace-K, because sucralose or aspartame is nearly always in there with it
  • Graded E for low-fermentation and SIBO plans and E for DASH, so it is one to leave out if you are running a strict protocol of either kind, even though the chemical trigger columns are clean
  • It is not a sugar alcohol. Sorbitol, maltitol and xylitol pull water into the bowel and ferment, which is why they cause gas and loose stools. Ace-K has no polyol content and grades A for polyols, so that particular mechanism does not apply to it
  • Heat stable, unlike aspartame, so it survives baking and turns up well beyond soft drinks: protein powders, yogurts, chewing gum, sauces, flavoured waters, medicines and toothpaste. Your total exposure is usually wider than you think
  • The potassium in the name is just the counter-ion that makes the salt. The quantity used to sweeten a drink is measured in tens of milligrams, so it is not a meaningful source of dietary potassium

Is acesulfame potassium a common food trigger?

Across the sensitivity criteria we grade it is clean: A for histamine and histamine liberation, gluten, lactose, dairy protein, salicylate, oxalate, nickel, sulfite, nitrite and glutamate. It is a small synthetic molecule that is not broken down in the body, so there is little for the usual food chemistry mechanisms to act on. The two honest caveats are that it is graded E for low-fermentation and SIBO plans, and that it is nearly always used in combination with another sweetener, so isolating it as the cause of a symptom is harder than it looks.

Does acesulfame K cause bloating and diarrhoea like sugar alcohols do?

It does not work by the same mechanism. Sorbitol, maltitol and xylitol are polyols: they are poorly absorbed, draw water into the intestine and get fermented by gut bacteria, which is exactly why they produce gas and loose stools at modest doses. Acesulfame K is not a polyol, is absorbed rather than left in the gut lumen, and grades A for polyols and A for every FODMAP group. If a diet product upsets your gut, read the label for sugar alcohols before you blame the Ace-K, because the two frequently appear in the same product.

Is acesulfame potassium low FODMAP?

Yes on the grades. Overall FODMAP status is low, and each group is rated A individually: fructans, galacto-oligosaccharides, excess fructose and polyols. That makes it one of the sweeteners that does not undermine a low FODMAP trial, unlike honey, high fructose syrups or the sugar alcohols. Keep the separate SIBO note in mind though, since it is graded E there.

Why is acesulfame K always mixed with sucralose or aspartame?

Because used alone at full sweetening strength it tastes bitter and slightly metallic on the finish. Blending it with another intense sweetener covers that aftertaste, and the combination tastes sweeter than the sum of the parts, so manufacturers can use less of each. Ace-K also holds up to heat and to long storage in acidic drinks better than aspartame does, so pairing the two gives a product that is stable on the shelf and pleasant to drink. The practical consequence for anyone tracking triggers is that Ace-K exposure is almost always joint exposure.
