About Malic acid

Malic acid (E296) is the acid that makes a green apple taste sharp, and the acid manufacturers reach for when they want sourness that lingers: sour sweets, fruit drinks, sugar-free gum, cider and some wines.

It is graded clean right across the trigger columns here, with no histamine, no salicylate, no amine and no FODMAP load. What it does have is a physical effect, because concentrated sour coatings are strong enough to strip enamel and irritate the lining of the mouth.

What trips people up

  • Extreme sour sweets are the one documented harm. The acid coating sits directly on enamel and soft tissue, and dentists see erosion, and sometimes raw patches and ulcers on the tongue and lips, in children who eat a lot of them
  • Sourness is not the same as intolerance. A sharp drink can provoke reflux or a burning sensation purely through acidity, and that will happen with lemon juice or vinegar just the same. Log it as an acid reaction rather than a food chemical one
  • In sugar-free sour sweets the acid usually shares the packet with sorbitol, maltitol or xylitol. If those sweets bloat you, the polyols are the thing to test, since malic acid ferments nothing
  • The commercial version is made synthetically as a mix of the two mirror forms rather than pressed out of apples. It is metabolised identically and carries no fruit protein, so an apple allergy does not transfer to it

Common questions about Malic acid

Is malic acid made from apples?

Not the version in your food. Malic acid was first isolated from apple juice and it is what gives apples, plums and rhubarb their sharpness, but food-grade malic acid is manufactured by chemical synthesis and comes as a racemic mixture rather than the single form fruit contains. Practically that means no apple protein, no apple salicylate and no cross-reaction with a fruit allergy.

Why do sour sweets make my mouth sore?

Because the coating is close to pure acid against soft tissue. The sour hit of extreme sweets comes from a heavy dusting of malic and citric acid, and holding them in the mouth lowers the pH far enough to demineralise enamel and irritate the tongue, palate and inner lip. The soreness usually settles within a day or two once you stop. Rinsing with water afterwards and waiting before brushing helps limit the enamel side of it.

Is malic acid allowed on an additive elimination diet?

Generally yes. The additive families a failsafe-style elimination removes are the preservatives, the synthetic antioxidants, the added colours and the flavour enhancers. Malic acid is an acidity regulator and sits outside those groups, which is why acidulants are usually still permitted while the numbered preservatives come out. If you are following a specific protocol, check its own list rather than assuming.
