About Carrageenan

Carrageenan is a thickener extracted from red seaweed (E407) that keeps plant milks from separating and gives ice cream, cream and deli meat their body.

On the classic food chemistry triggers it is clean: no histamine, no salicylates, no FODMAPs, no lactose, gluten, nickel, sulfites or free glutamate, which is why it grades A across those columns here. Its D grade for inflammation and its exclusion from AIP come from somewhere else entirely: a long-running and genuinely unresolved argument about whether food-grade carrageenan irritates the gut lining. Understanding that argument is the difference between avoiding it for a reason and avoiding it out of noise.

What trips people up

  • Most of the alarming animal research used poligeenan, not carrageenan. Poligeenan is an acid-degraded, low molecular weight version (around 10 to 20 kDa) that is not permitted in food and is used deliberately in laboratories to induce inflammation and ulceration. Food-grade carrageenan is a much larger molecule. Anyone quoting the ulcer studies at you is usually quoting the wrong compound.
  • The distinction is real but not perfectly clean. EFSA re-evaluated carrageenan in 2018, kept the group acceptable daily intake at 75 mg per kg of body weight, but made that figure temporary and asked for better data, noting that the low molecular weight tail of food-grade carrageenan overlaps with the high molecular weight tail of poligeenan.
  • Human evidence is thin in both directions. A small randomised trial in ulcerative colitis patients in remission found earlier relapse in the carrageenan arm, but with roughly a dozen participants it is a signal to follow up, not a verdict. If you have IBD or react to plant milks specifically, it is a sensible single variable to test in a food journal.
  • It is easy to remove from a diet without noticing what you removed. Carrageenan concentrates in plant milks, dairy-free cream and yoghurt, ice cream, processed cheese and sliced deli meat, and those products carry other candidate triggers too. Swap the product, then reintroduce, rather than assuming the additive was the culprit.

Common questions about Carrageenan

Is carrageenan actually bad for your gut?

The honest answer is that nobody has settled it. Regulators including EFSA and JECFA have reviewed carrageenan repeatedly and continue to permit it at current use levels, while a body of cell and animal work argues it disrupts the intestinal barrier and promotes inflammation. Much of that work either used poligeenan, which is not a food additive, or used doses far above dietary exposure. Human trials are few and small. If you have inflammatory bowel disease or persistent unexplained gut symptoms, treating it as worth testing is reasonable. Treating it as proven harm is not supported.

What is the difference between carrageenan and degraded carrageenan?

Molecular weight, and it changes everything about how the molecule behaves. Food-grade carrageenan is a large polysaccharide that is too big to cross the gut wall. Degraded carrageenan, correctly called poligeenan, is produced by treating it with acid and heat until it breaks into fragments of roughly 10 to 20 kDa, small enough to be taken up by intestinal cells, and that is the form used to induce inflammation in laboratory models. Poligeenan is not authorised in food. The open question EFSA flagged in 2018 is how much low molecular weight material sits at the bottom edge of commercial carrageenan.

Is carrageenan high in histamine or a FODMAP?

Neither. It grades clean for histamine content, histamine liberation, tyramine, salicylates, oxalates, nickel, sulfites and free glutamate, and clean across every FODMAP group including polyols. It is a purified seaweed polysaccharide used at fractions of a percent, so there is almost no chemical load to carry. If a carrageenan-containing product upsets you, look first at what else is in it, whether that is a plant milk base, gums, added inulin or the dairy it is standing in for.

Why did so many brands remove carrageenan?

Consumer pressure more than regulation. The US National Organic Standards Board voted in 2016 to strike carrageenan from the list of substances allowed in organic food, and although the USDA declined to follow that recommendation in 2018, the publicity was enough that many plant milk and yoghurt makers reformulated with gellan gum or starches anyway. The additive remained legal throughout. Reformulation was a marketing decision taken in an unresolved evidence landscape, which is a different thing from a safety recall.
