About Agar agar

Agar agar is the gelling fibre pulled from red seaweed and sold as E406, and it is one of the very few ingredients in this database that grades clean on every single trigger column: histamine, salicylate, oxalate, nickel, sulfite, glutamate, gluten, lactose, every FODMAP group, lectins and fermentability.

That surprises people who avoid seaweed, because whole seaweed is a heavyweight for salicylates and free glutamate. Agar is not whole seaweed. It is a purified galactose polymer, stripped of the compounds that make kombu and nori a problem, and human enzymes cannot break it down at all, so it passes through as inert bulk.

What trips people up

  • It is a bulk laxative before it is anything else. Agar swells to many times its volume in water, which is exactly why a teaspoon sets a whole pan of liquid, and why taking it dry or with too little fluid can lodge in the throat or the bowel. Always dissolve and boil it into the liquid rather than swallowing powder.
  • Recipe quantities are tiny, usually under one percent of the dish, so the fibre load from a set dessert is small. Trouble tends to come from agar sold as a slimming or constipation supplement, where the dose is far higher.
  • Low iodine protocols before thyroid scanning generally ask you to drop seaweed derivatives including agar, alginate and carrageenan. Purification is not the same as removal, so follow the protocol rather than reasoning from the ingredient list.
  • Not a substitute for gelatin one for one. Agar sets firmer and at room temperature, so cooks who swap by weight get a rubbery result and sometimes blame the ingredient for a texture problem rather than a ratio one.

Common questions about Agar agar

Is agar agar high in histamine or glutamate like other seaweed?

No, and this is the useful distinction. Whole seaweeds carry high free glutamate and high salicylates, which is why kombu is used as an umami base and why many people on histamine or salicylate protocols avoid the category. Agar agar is an extracted polysaccharide: the gelling fraction is separated out and the flavour compounds, amino acids and much of the mineral load are left behind. It grades clean on histamine, histamine liberation, glutamates, salicylates and tyramine.

Is agar agar low FODMAP?

Yes. It grades clean across fructans, GOS, excess fructose, polyols and total FODMAPs, and it also grades well on the low-fermentation SIBO column. The reason is that humans lack the enzymes to cut agarose, and most gut bacteria lack them too, so unlike inulin, chicory root fibre or guar gum it is not a feast for the microbiome on the way through. It behaves more like an insoluble bulking fibre than a prebiotic.

Does agar agar cause bloating or diarrhoea?

It can, but through water and volume rather than fermentation. Agar holds a great deal of liquid and speeds transit, which is precisely why it is sold as kanten for constipation in Japan. In dessert quantities most people notice nothing. In supplement quantities, or without enough fluid alongside it, expect looser stools, and be aware that swelling in a dry gut is the mechanism behind the rare reports of obstruction.

Is agar agar a good replacement for carrageenan?

For most home and small-batch uses, yes. Both come from red seaweed, but agar sits clean on the inflammation and AIP columns where carrageenan does not, and it carries none of the contested gut literature attached to carrageenan. The tradeoff is texture: carrageenan makes soft, creamy suspensions that keep plant milks from separating, while agar makes a firm brittle gel, so it is a straight swap for jellies and panna cotta but not for a smooth beverage.
